It's out of character for Peter. He's a science nerd and actually loves Connor's lectures. He also attended Stark's lectures in the books/comics written in the 90's in regards to Stark building new tech for society. This is the one class where he would actually pay attention.
Actually, If you think, it's not creepy that he is writing "MJ" multiple times. In this movie, she was starting to become famous. I think Peter was just representing that her name is in everywhere he looks at.

I really would have liked to see this in the film. The first one showed that Peter was a surprisingly incredible artist. This scene would have added to that.

These movies were the foundation for the MCU, it defined the next generation of super hero movies. Ironman 1 was really good too but the rest were cash grabs in my opinion and the avengers movies were decreasing in quality every new film. Each of them had a pretty dope scene or two but that's all.
