    This lemon cake is a luscious cake that’s loaded with refreshing lemon flavor and zingiest lemon glaze. This recipe creates a delicious, soft and moist crumb. It’s super easy to make and a perfect spring and summer treat.
    You’ll need:
    • ¾ cup (168g) unsalted butter (softened)
    • 1 cup (200g) white sugar
    • 1 tsp fresh lemon zest
    • 3 large eggs (room temperature)
    • 5 tsp fresh lemon juice
    • 1 cup + 2 tbsp (141g) all-purpose flour
    • ¾ tsp baking powder
    • ½ tsp salt
    Glaze:
    • 1 cup (114g) powdered sugar
    • 4-5 tsp fresh lemon juice
    • ½ tsp fresh lemon zest

    :: HELPFUL HINTS ::
    Measure your flour correctly. Adding too much flour will result to dry and crumbly texture of the cake when baked. Fluff the flour in the container before scooping it out. Lightly spoon the flour directly into the measuring cup until it mounds well above the top of the measuring cup. Using the back of the dinner knife (non-serrated side is facing the flour), sweep the knife over the top of the cup to remove the excess flour.
    Let the cake rest for 30 - 45 minutes before adding the lemon glaze on top of the cake.
