@@SpainonaFork I made this today. I used Arborio rice, which I had on-hand, but all other ingredients as written (including the wonderful Spanish paprika you've recommended). So incredibly delicious, full of flavor, easy (and enjoyable) to make...This will be a staple dish this Winter! ❤️❤️🤗

Cooking rice without covering it is slightly anxiety producing for me. I have seen Persian rice cooked without a lid as well. Confuses me. Obviously it works. I will try it and get more comfortable with this technique. Thanks!
I will cook these kind of rice and bean mixture, but definitely will add some good amount of chili instead of the Spanish paprika - it is too bitter for me. Thanks for all your videos. I have them all:-))

They can usually take up to 400 F (200 C), they can be used on an open flame, but you need to read up on how to prepare the cookware before cooking with it :) much love
Is there a reason why you use green bell pepper rather than red (or a combo of red and green) in this recipe, Albert? Similarly, is there a reason for slicing the bell pepper rather than dicing it? Or is it just one of those recipe traditions that nobody quite understands but still respects?
I am sure you could use whatever colored peppers you have and cut them however you like. I think he likely only had green and sliced them for a different shape from the other veggies. Do what you will.
I am learning Spanish. I have a linguistic question (because of a word in the video). The English word: VEGETABLE S- I learned the word, "HORTALIZAS". I went to a Nicaraguan place and they said, "No, Use Vegetales". I went to another South American restaurant and they said, "No, use verduras", like you did in this video. I went to a Mexican place and they said, "No, Verduras refers to "Greens" like Spinach, Kale, and other leafy greens, you mean vegetales for onions, carrots, celery, zuchhini, squash, eggplant...etc" LOL Now I'm confused. :P Is this word for vegetables different for distinct Spanish speaking countries? Is the Spanish word "vegetable" specific to different types of vegetables? When do I use, "Hortalizas, Verduras, and Vegetales? Thanks. With this video, I get Dinner and an education! HaHaHa
I'm American-born of two Mexican-American parents. Their respective dialects of where they grew up in their respective regions of Mexico differ. For the word "vegetable," my father (born in Austin, Texas) used "vegetales." My mother, (born in Sacramento, California) on the other hand, OFTEN used the word "verduras," but not necessarily to mean "vegetables NOR greens," but to mean "raw vegetables." When cooked, they became "vegetales." (Kind of like once an avocado is mashed it becomes guacamole - whether you add other ingredients to the guacamole or not.) Here's one for you... Look up the word for "cabbage" in Spanish, and the definition(s) will take you from Spain to ALL over Latin America. @Skoben2000... Good question, and best of luck to you!❤

I prefer black pepper, as white pepper is less complex and has less flavor, but you can totally use white pepper if you prefer :) much love

Yes, slightly smaller cups in Spain, it seems. Luckily, Albert always specifies ml and g, not just cups.
