      @@joseantoniodavila2752, not at all. All countries have the kind of cuisine they can afford according to what you can get and produce. Spain is a very varied country with all kinds of climates and seas, so its cuisine (cuisines as a matter of fact, since every region has its peculiarities) is also very varied. One common caracteristic, though: since you can get all kinds of very high quality vegetables, fruits, meats, sausages and fish, spices an herbs are not much utilized, since those ingredients, when overused, hide the authentic flavors of the "real" food.

    This is a wonderful recipe. I was missing several veggies and made it with canned peas, broccolini, carrots, celery, A small Yukon potato (fryed before) and asparagus. It was awesome.

    I'll have to try this. I love making paella, but this looks easier and just as tasty. Great instructions, especially about not stirring the rice too much.

    Hi. I made this recipe this evening. Used Arborio rice, a bit more tomatoes, and more smoked paprika ( being a Hungarian, I don't spare the paprika :-) ). I stuck to the rest of the ingredients and the timings, though I live at 6200 Feet above see level. The dish came out perfect. The liquid DID reduce as you predicted. The ingredients, including the rice were al dente. Just the way we like it. This dish is a winner and I'll be making it on a regular basis. Thanks very much for posting! ( I'm already subscribed to your channel. )

      @@sherekhan90 Koszonom. Izlett a Spanish Chickpea Stew is. En viz helyett szurt csirke levest ( chicken stock ) hasznaltam. Az hiszem tobb zold es piros paprika mehetett volna bele. A felesegem at akar allni vegetarianus kajara tehat most keresek hasonlo recepteket amiket eleg hamar meg lehet csinalni. A halfeleket es a tengeri dolgokat meg megeszi. ( O dolgozik meg, en mar nem. Tehat en fozok. ) Jo tudni, hogy a masik receptjei is finomak.

    I’m a big meat and seafood eat, but this looks fantastic. I’ve been learning Spanish cooking from you so that I’ll be able to easily cook Spanish foods when I relocate to Valencia when the pandemic is over. Thanks to you and a few other vloggers after years of struggling to make a great tortilla de patatas, I’ve nailed it. I now eat pan con tomato and sometimes add some tortilla de patatas on top to make a hearty breakfast!

    In India, we have a similar dish called "biryani", and the more popular regional variants are "Hyderabadi biryani" , "Lucknowi biryani" , "Kolkata biryani" , in both veg and non-veg options. Must try, if you want the most flavourful meal. Highly popular across India and even outside India.
    Though will try this recipe too. Thanks. Looks yummy

    I hav never made paella but I had so many amazing paella dishes in Spain. We usually visit every year and I missed Spain is cuisine so much. This recipe was easy and SO amazingly delicious!! My husband was surprised and delighted at being reminded of our adventures in our fav country in the world. Can’t thank you enough. Oh and also my toddler loved this too!

      Or perhaps they grow their own and sell any extra at a market...? This is a common practice for less wealthy people throughout the world; one need only plant saffron bulbs once (about 20-30) and reap a small crop annually and the bulbs multiply!

    Made this last night. Wonderful! The only change I made was to substitute orange bell pepper for red. Made the whole thing much more colorful with the green vegetables and red tomatoes.

    Love your meatless dishes or even your ones with a little meat to have with SSI dish or whatever this dish would work occasionally as a meatless meal it has wonderful vegetables and probably wonderful flavor and thank you for referring me to your listings for your paprika's and stuff I have always wondered about these and I will get several of these and try using them past Merry Christmas and two a happy New year's to you but happy holidays and thank you can't do your patron would like to I will just have to go with the freebies please keep broadcasting love you

      I have saffron threads mine are of the humble kind since they cost around $10.00 which is more then I normally spend on spices. When you live on Social Security you don’t buy the type of humble ingredients this man can afford.

      Saffron isnt as expensive as people like to believe it is. His brand is 20.00 u.s. not sure where youre shopping. Mccormick has spanish saffron for under 20.00 u.s. and that gives you about 8 to 10 meals using about 15 threads a meal. You need very little.

    Basically a vegetarian paella but without the socarrat...the crispy layer on the bottom is what makes Spanish rice so special.

    I suggest frying the vegetables separately (except for the tomatoes), because if you don't, the vegetables are overcooked and soggy. Cooking them separately preserves their crunchy texture.
