When I was a kid, the chocolate glazed old-fashioned's from Safeway were my favorite breakfast item in the world. I got the nostalgias a couple weeks ago and looked up a recipe for old-fashioned doughnuts. Yours look better.
Since the covid situation last year, been making all my donuts at home. No regrets there! My homemade donuts are a lot better than the store bought ones and I can adjust the sugar level to according to my preference. This is my first time seeing old fashioned donuts style and I can't wait to make them!
Oh my goodness, I grew up on Winchells Old Fashion donuts. When I was in my 20’s, I used to get off work at 2am (Winchell’s was open 24 hrs) this is when they would be making the donuts. I would pick up a couple dozen, glazed and chocolate iced. Best donuts ever. I have to give this recipe a try. Yum Yum
hi...i made those yesterday nd was delish yum yum... i added mixed spice from McCormik for its nutmeg (i dont hv individual nutmeg) and i simply powdered sugar glazed it...just for a tad of sweetnest..😋😋😋. i tried baking it but, frying is better. i tried not to make this everyday because this mama will devour it straight. tq for ur recipe...💖🙋🏻
i love old fashioned donuts! I think you missed a crucial ingredient though, fresh nutmeg! That gives them that classic taste. Thanks for sharing this recipe.
No, there is no nutmeg in cake donuts, the only one you will find nutmeg in is maybe a pumpkin spice cake donut, but, not in just a simple cake donut! 3:30
0:09 finally someone shares my opinion!!! ❤️ whenever people buy a box of donuts it usually has like 100 glazed, 50 chocolate frosting with sprinkles, 25 maple, and maybe 1 or 2 old fashioned 😂😭😭😭 *whyyyy*
+BBQGuys.com We were just eye-balling your deep dish pizza recipe! Sounds like a great way to spend an afternoon, eating pizza and, watching the Seahawks......win?...maybe? :)
Thanks, since I saw the video, I was waiting for the Sunday to make these donuts and now I can tell you guys; thanks very much. It was delicious. I don't now if they are really with the same taste because here in Brazil we don't have sour cream so, I made a similar and made the donuts but anyway, it was delicious.
There is place outside Baltimore that makes donut sticks with I hope this dough that had hint after you swallowed of Orange , so good people would buy dozens at a time ( people were buying boxes of dozens, mixed for a 100 crew construction site ) , place has great donuts but the sticks " were to die for".
@chefsteps I know with yeast doughnuts, you can only refold the dough once or twice after each cut (for maximum yield) before it gets "tough" almost. Is it the same for cake style doughnuts as well?
+Wil Byrum Great question, you can refold the dough more than you could with a yeast donut, but the texture will still change due to the flour used in rolling it out, the more you roll it.
+ghaida h You can certainly try it. The texture may be different and they may crack in a way that does not match the video, but Chef Nick is actually really curious how this would work as we haven't tried it. If you experiment, please let us know how it goes/feel free to send pictures to info@chefsteps.com.
This looks great, thanks. People, please don't use plastic wrap anymore. It is so dangerous for the land and sea life animals who swallow it. People have been cooking long before plastic wrap was available.
In future videos, can you explain the purpose of some of the unusual ingredients (e.g. Sour cream) and whether it's there for a scientific reason or just for taste?

+100nitrog you obviously never had Winchell's chocolate old fashioned
That line at the beginning was absolutely hilarious. And the way he said it too hahaha!! So much support for you guys!
Those look ripe for dipping in coffee! Thanks!
+Seattle Coffee Gear Indeed it does!
Call me old fashioned but this channels the best.
+Obi Thank you!
It’s been 7 years people 💀

I can honestly say, I have been waiting 40 years for this..
You guys make me so happy every time I watch a video, old or new. Thank you ♥
+Shukurimu Kurokawa (Nom Nom) Hooray! That's the response we're going for!
Thank you for the detailed instructions and comments about this recipe. Can´t wait to try it. Good job!
Really liking the format where you talk through the video with instructions and tips.
+LittIegator Thanks so much for the feedback! Great to hear!
Krispy Kreme-style donuts + brioche-y chewiness = the ChefSteps yeasted donut: ruclips.net/video/8zIR0TgNBFI/видео.html
Could you guys do a video on different glazes for the donuts
i love old fashioned donuts! I think you missed a crucial ingredient though, fresh nutmeg! That gives them that classic taste. Thanks for sharing this recipe.
This is the way.

The absolute best !!! Thank you so much !
Used this recipe and added a single ripe banana to the mix. With an adjusted cook time they came out golden and perfect! Will work on glazing next.
Good recipe!
I just made a 1/4 batch, i came out with 4 donuts.
Thank you!
Can't make amazing Old Fashioned donuts at home? Why, of course you can! chfstps.co/1ZYyhyH
+ChefSteps are u guys gonna make the yeasted version as well?
+Andrew Felix Ferdaus .......maybe. ;) Seriously though, watch for our upcoming videos, we got you covered.
+ChefSteps If you guys could make a better yeast doughnut than Krispy Kreme that would be awesome.
+CoasterNinja Look for our new release tomorrow!
ChefSteps Saweeeeeet. It's crazy how light they get those donuts. Looking forward to see how you guys do it.
0:13 legend says that to this day hes still standing there, waiting for a donut sharing partner

and the one and only old-fashioned coated with sugar and even chocolate!!! why???
I can't have enough of chefsteps videos .. I'm dying.
YUM. Agreed, favorite donut by far :D Especially when dipped in a dark chocolate glaze.....
Those look so good!

Pizza is always a great way to spend the afternoon! I prefer to watch the Saints win ;)
+BBQGuys.com Seahawks....
I love these raggedy-looking donuts! More crunchy, has more texture. :D
Wonderful video too, by the way! Wonderfully made! :)
Nice Video,Thanks. What works best all purpose flour or pastry flour?
A man after my own heart. Old fashioned donuts really are the best donuts hands down. God those looked so good, I really need to try this recipe!
Thanks, since I saw the video, I was waiting for the Sunday to make these donuts and now I can tell you guys; thanks very much. It was delicious.

+Fabiana Ferreira Awesome! So glad to hear they turned out well!
Great video! Can you combine the left over dough, roll it out and make a couple more doughnuts?
+Matthew A Absolutely!
Hi! Love this recipe! What brand of pastry flour do you think is best? Thank you
I subscribed right away! Great recipe, awesome video and laughter! ❤
I love these! So making this!
😍 I NEED to try this.
+Gloria Moon Yes, yes you do.
Looks good, but I'm a yeasted doughnut girl. Did some lovely salted caramel glazed ones a few weeks ago
+MiFFiL Look for tomorrows newest video! We got you covered.
Very good video. Thank you.
beautiful 😍 now I have to try them myself! 🙌
Nice. Made donuts the old fashioned way we used to make em this past weekend. Canned biscuit dough. :) This would be substantially better.
Looks so good!! Cant wait to try this recipe out🙌🏻🙌🏻
Let us know how it goes! Thanks for watching.

Love this recipe and your presentation. Why doest the oil foam when I first put in the donut.
Within the first 18 seconds of this video I liked it then went to like it again and realized I already had lol. You have really good vibes
+RMGrmgryfry1024479 We love hearing this! That's exactly what we're going for. Thanks!
Thanks for sharing 🙏
What if I don't have pastry flour? What type of flour can I substitute? Thanks! Love your video tutorials.
these will have to be made, thank you guys

Love the Twin Peaks reference about your coffee.
I can't wait to try this.
+Cousin Gaming Tell us how it goes!
Looks like a great Sunday morning project. Is the dough refrigerated to make it more workable or to hydrolyze the flour?
+Yoo Toob To make it more workable!
Try not to twist when cutting them out, as it makes them rise uneven!
You cook!?
Wait, not twisting makes them uneven, or twisting makes them uneven? I want the _most_ uneven possible!
It's true ... Don't twist a dough cutter. Yes, we actually cook.
CAKE DONUTS ARE THE FUCKING BOMB. Yeast ones are okay, but they'll NEVER compare.
Looks so good . I'm craving these but really hate frying. Is it possible to bake them?
+ghaida h You can certainly try it. +ChefSteps thank you so much for replying. I will definitely try it and get back to you
7 years later.......
Thank you i make your recipe and is 100%good thank you ❤❤❤❤❤
Dudes!!! So awesome. Family meal dessert!!
I'm in love with your channel . awesome !!!
Hi guys! gonna try these out! Question. Would you use half AP flour and half cake flour if I don't have access to pastry? Or just go with AP?
+Austin Denny AP all the way!
Love this recipe I will try it. Thanks for share, have a nice day ::)
+voncocina Thank you, you should!
I invite you to have a look to my channel and see the last videos uploaded. Have a nice day ::)
This looks great, thanks. People, please don't use plastic wrap anymore. It is so dangerous for the land and sea life animals who swallow it. People have been cooking long before plastic wrap was available.
"I'd eat like two or three of 'em."
That is a lie.
I loved the recipe they were delicious
+Afinuyasha Glad you gave it a whirl!
I have never found pastry flour in any of my local grocery stores. Could you make these with AP flour as that's what MOST home bakers already have.
🎉
You can also fry these with shortening to make for a less greasy donut.
Your favorite? Mine too! :D I prefer eating those over the normal donuts you find at a donut shop.
Great Vid! You guys ever use donut frying oil?
+fred stone Thanks! We haven't experimented with donut frying oil, but we use canola oil because of it's value, neutral flavor and high smoke point.
+chef steps, if I wanted to do pumpkin flavored donuts, could I just sub out some sour cream for pumpkin purée?
My mouth is watering!
What type of oil do you recommend for frying?
+Sataylor8 We recommend Canola oil. Peanut or corn oil can also work well.
If you were gonna reserve the dough for a few days would you freeze them?
Thank you!!!
+Evan Saylor Anytime!
Hi i lv these donuts and want to try eagerly bt pls mention the quantity if ingredients used plzzzzz
In future videos, can you explain the purpose of some of the unusual ingredients (e.g. Sour cream) and whether it's there for a scientific reason or just for taste?
It is hard to get sour cream in my place, do you know how can I substitute it with? Does full fat yogurt can be the alternative?
thank you very much!
Just found your page...wish you would post a recipe for the old fashioned chocolate donuts
Could I use greek yogurt or a plain yofurt instead of the sour cream?
+Pedro Santizo should work, i thin they all share similar ingredients
it's autumn. how can I make these more pumpkiny?
Hey guys, where can I pick up a set of those pastry rods?
+ChefSteps what are pastry flour does it matter?
ChefSteps where I can buy those amazing plates?
So is it ok to add dry ingredients one spoon at a time? I throught that the flour will absorb different amount of moisture, is it a big deal anyways?
+Sebastian Klíma Yes, adding the ingredients one spoon at a time. The main reason we do this is so that the flour doesn't go everywhere!
Hi! After molding the dough, can I keep it in the freezer?
You mentioned pastry flour ? Can you use regular flour?
just made this at home 😊😊
real question: how do you make the glaze
www.chefsteps.com/activities/doughnut-glaze Milk, Powdered Sugar, whisk
I love old fashioned 💗
do you have a good recipe for the chocolate frosted top?
this is a good excuse to buy that stand mixer ive been wanting for years.
Nick is great, very inspirational! Heck, come to think of it the entire crew is as well!
I am going absolutely crazy about those plates - dinner/side plate with a 'high', straight edge. How do I call them?
What's a good alternative for pastry flour
anyone knows wether I can substitute the sugar with stevia? And is it possible to use the hand held mixer instead of a stand mixer?
Fun fact. What we call donut holes are actually the donut. A "dough nut". Hence, "nut". Of course, Americans screw semantics up all the time.
Yep, but we are superior to all other nations on the planet so who cares.
Can you use self-rising or all-purpose flour?😮
I was waiting for a recipe for the glaze. I notoriously mess up glazes and syrups. (even simple syrups)
+Billay649 Check it out! www.chefsteps.com/activities/doughnut-glaze
Can you substitute the sour cream for buttermilk?
Where have y'all been all my life 🎉🎉🎉🎉
Okay, cool, so how long to sous vide these?
Please can you list the ingredients and the icing ingredients as well?
Thank you for the recipe I found these best at 24 hours (respectfully)
How can i make the dough chocolate or with bits of fruit like strawberries and blueberries?
Try Tasty's Strawberry Cheesecake Old Fashioned Doughnuts. Trying them myself...
How meny bsgs of sugar do i use ? The flour was in 5 pound sacks and the sugar was only 4 pounds i discovered after they turned out .
I bet they want to make a donut they can sous vide.
