Helo Vincenzo, yout fan from Poland here. Im making classic ragu ala bolognese at the moment. Never tried penne vodka ever. I must go to local Italian shop to buy panchetta and the cheese and penne. Other ingridients i have, a lot of vodka ;) which i dont like to drink often, i prefere dry wine.

I make our family vodka sauce which is very similar to this. The only differences is I don’t use yellow onion, I use shallots. I also do some fresh chopped garlic. Sometimes I will do prosciutto instead of the pancetta. I mix it up and between both meats. I found your channel tonight and I’ve been watching all your videos. So great to learn new recipes and build on the family recipes that I’ve been taught. Thanks for the videos, I am an instant fan!!!!
Love this dish! I use Italian sausage instead of pancetta generally, and parmesan instead of peccorino (just because I always have it) but can't go wrong either way! Great recipe!

Just made this. My 92 year old Italian mother loved it. Didn't have pancetta, so I went with bacon and added garlic along with other spices to the mix. I even threw in a few sardines to dissolve as an added taste. Finished off with parmigiano reggiano from the wheel and it came out great. We buy wheels from Italian importer and it really put the entire thing over the top. I stuck with the recipe as well as I could (I am not a chef) and I think I got pretty close. Certainly it had the same look as in the video presentation. Thank you for the recipe and video!
He's right about the time period. I was friends with an older Italian lady (God rest her soul) and sometimes we would go to this little Italian restaurant back in the late 1990's where she knew the chef. She would make the most AMAZING penne alla vodka for me. It tasted out of this world. Today I hardly ever see it outside of diners and of course it doesn't taste all that good if you get it there!

@@BigHalfSteps This recipe has cream in it originally. Just like panna e piselli. Some regions of Italy do use cream in certain, specific, pasta recipes. But not in fucking carbonara. No one from Italy, be they from Trentino or Sardegna, would put cream in carbonara.

Actually, I think part of the point that Vincenzo was trying to make was that it was not a “traditional” dish but one made popular ( in NYC if you believe the legend) that was fashionable in Italy in the late 80’s early 90’s. His point of view may annoy the food police but that does not mean that this dish ( especially with his addition of pancetta which is usually not included in the US or cream which does not generally appear in Italian tomato based sauces ) does not taste great.

Hey Vincenzo, I know this is an older video and not sure if you will get the comment. My dad really wants me to make Penne Alla Vodka. I looked in several stores here and no one seems to sell light cream or cooking cream. They all have heavy cream and I know that's wrong. The closest thing that I could find is nestlé Media Crema - table cream. It's ingredients are: Light Cream, Carrageenan, Sodium Alginate, Disodium Phosphate, Sodium Citrate.. do you think that will work or should I just abandon ship on this project?
Bit late, but out of those options, double/heavy cream should be ok, either use less or dilute it with milk. I'd just use less personally. It only needs to add some creamyness to the sauce.

I'm an Italian from Chicago and while working in NYC around the 1980s, I first discovered penne alla vodka. I fell in LOVE with it, and now I know why. I thought it was the vodka that made it so special somehow but it's actually the panchetta and cream that as an older adult, I still think about the first time I tasted it!

This was one of the first dishes my daughter made when she started cooking, because (like most pasta dishes) it’s very easy to do. She was 11 years old and did it pretty well. I love making Vodka Sauce, I actually used to hate Vodka Sauce because I'd only had it in the jar and it literally tasted like vomit, but my fiance loves Vodka sauce (even the jarred) so I've been watching you for a couple years and really love your Cacio E Pepe recipe so I figured I would try this and wow just wow it's sooo amazing and addicting! Actually making it amazing tonight but I'm using Gaunciale because I did find it finally and using San Marzano by Cento tomatoes and kitchen is smelling amazing! I love this recipe! It's the only reason I would even buy vodka. Good tip about not putting tomato before vodka - for those wondering why it is wrong, it won't evaporate if you put it in after the tomato!
I always put the Vodka in after the tomato. It cooks out fine and the sauce has a nice tangy flavor that way but I'll have to try the tomato first someday to see if I notice the difference.

In my trips to Italy every dish was so simple yet fantastic. Americans just like to add a bunch of crap you don't need, and it ruins the flavors. @@vincenzosplate to make the adult style add the vodka at the end and only cook it down 3/4 still leave just a small amount of the vodka and it will still not get you drunk but you will taste the vodka and it's a pretty good peculiar taste
Oh man! I just watched another Penne Vodka recipe before watching this.. she added the vodka at the end..arrrrghh (how was it going to burn off?) and she added the cream too early and the pasta wasn’t coated with the sauce… and she had no real fat/smoke.. no bacon, no pancetta.. no flavor! Your recipe and the explanation of when to add the cream was KEY! She also cooked the sauce while the pasta was cooking.. no wonder she was in a hurry to finish the sauce.. else the pasta would have been a gluggy mess!

This looks like it would have been delicious! I agree with using basil for most tomato sauces. I see it almost as adding vanilla to a dessert. As for the use of cream here, would it have been more common to use panna da cucina?
Bravo! Such a simple yet tasty dish. Your pasta dishes always make me want to cook more. On a side note, I would live to see your take on some proper Risotto dishes. Perhaps with truffles, or mushrooms, or both :)
Love penne pasta, it always seemed to have a significant better chew then many other pastas, making an oven lasagna version of this was quite enjoyable. I actually recall many times in the 80s and 90s trying to track down penne pasta that had an extruded ribbed texture to the outside 🤷♂️ It seems to be more common and the standard now, the smooth just couldn't quite grasp the sauce. I used to make this all the time. I haven't in a while, but will have to now. However, I don't use the pancetta, but it can be made either way. I crack up Vincenzo. It seems like whenever you make a red sauce, you wear a white shirt.

I love making Vodka Sauce, I actually used to hate Vodka Sauce because I'd only had it in the jar and it literally tasted like vomit, but my fiance loves Vodka sauce (even the jarred) so I've been watching you for a couple years and really love your Cacio E Pepe recipe so I figured I would try this and wow just wow it's sooo amazing and addicting! Actually making it amazing tonight but I'm using Gaunciale because I did find it finally and using San Marzano by Cento tomatoes and kitchen is smelling amazing! Thanks for all the great recipes you've shown!

I always put the Vodka in after the tomato. It cooks out fine and the sauce has a nice tangy flavor that way but I'll have to try the tomato first someday to see if I notice the difference.

In my trips to Italy every dish was so simple yet fantastic. Americans just like to add a bunch of crap you don't need, and it ruins the flavors. Oh man! I just watched another Penne Vodka recipe before watching this.. she added the vodka at the end..arrrrghh (how was it going to burn off?) and she added the cream too early and the pasta wasn’t coated with the sauce… and she had no real fat/smoke.. no bacon, no pancetta.. no flavor! Your recipe and the explanation of when to add the cream was KEY! She also cooked the sauce while the pasta was cooking.. no wonder she was in a hurry to finish the sauce.. else the pasta would have been a gluggy mess!

This looks like it would have been delicious! I agree with using basil for most tomato sauces. I see it almost as adding vanilla to a dessert.

Love penne pasta, it always seemed to have a significant better chew then many other pastas, making an oven lasagna version of this was quite enjoyable.
I actually recall many times in the 80s and 90s trying to track down penne pasta that had an extruded ribbed texture to the outside 🤷♂️
It seems to be more common and the standard now, the smooth just couldn't quite grasp the sauce.
