What a great recipes for the end of August when I’ve exhausted my other cucumber recipes! Thanks for explaining the rational for choosing Kirby over the Persian version I didn’t realize that the flesh on the Persian variety was too soft to hold up to this type of quick pickling

Re the cucumbers, here in Australia the small cucumbers we have are called Lebanese cucumbers. I suspect that's what you call Persian cucumbers. Will have to investigate what these are that you recommend 😊 Edit to add: it took me a while to find Kirby cucumbers (I thought you had said something like "carby" so got a billion references to carbs 😅 So here in Australia Kirby's are summer crops and we are at the end of winter here. I could try cornichons, which like Kirby's, are pickling cucumbers. So here we call them green cucumbers (original!) or pickling cucumbers. At this time of year we won't have many choices, although telegraph cucumbers might work because the skin is a little tougher
