Also, it was just occurring to me that one reason for canned chicken might be to avoid any extra fat rendering from the meat; but in that case, you need the egg. With ground meat, however, you probably don't need the egg, but do have the problem of excess greasiness!

the parchment paper on the first cook works best, then switch to pizza sheet to get the crunch. Try with BBQ sauce, Caramelized Onions, little pulled pork and smoked gouda! Insane!!
Use Parmigiano cheese, not a soft, high moisture cheese like mozzarella. Never add high moisure toppings like pineapple. Not to mention pineapple totally defeats a low carb no carb pizza crust. Duh!?! Also, season the crust mixture with salt garlic oregano and basil. You can also brush the bottom with olive oil after you baked it but before adding toppings. That will add more crisp and flavor. Another tip is reverse the cheese and sauce or add a thin layer of cheese under the sauce. It will help prevent the sauce soaking into the crust. The better way is to use tomate paste instead of sauce and just season it with garlic basil and oregano. Put it onnthe stove and add the herbs heat till its hot and the herbs are releasing. The spoon it hot onto the crust and top and into a oven as hot as your oven will go. The tradition sauce is to wateryand we are only after the flavor not that extra moisture. For carnivores load it up with sausage, pepperoni, salami, , 70/30 beef and thick cut bacon chunks. Other toppings bbq seasoned leg thigh chicken meat, smoked brisket sliced chunks. You can do a breakfast or taco/mexican topping. Instead of tomatoe paste use a thick salsa taco seasoned beef a mexican cheese variety of your choice. Another good one is shrimp and crab or clams with old bay. Add butter or ghee o drizzed on top for tge added fat and flavor. The seafood and mexican ones are quite low fat as you have all that protein frommtge chickenncheese egg crust. You can use Chorizo meat for tge mexican and tgat will help with the fat content and TONS of flavor from the spices. We've been making "carnivore" meat crusts like this for over 30 yrs. Its nothing new. BTW raw ground chicken vs cooked canned allows you to roll out the crust mixture much thinner using wax paper over top and parchment underneath. Obviously you remove the wax paper. It's just there to prevent sticking to the rolling pin or whatever you use and lifts off easily from the chicken mixture.
Btw, do you add egg to your meat mixture, and am I assuming correctly that you prefer ground chicken to canned? And have you ever tried ground turkey or other meat, like bison or beef? I have learned I am sensitive to the whites of eggs, so I will have to leave that out of mine. So I was wondering how badly egg was needed to hold it together, or if I could just add a little extra Parm instead. I also could add some ground flax or psyllium seed or coconut to help, too, if you think it might be necessary.

You can also buy ground chicken at the supermarket. You still need to remove excess water from the chicken. It usually comes in a one pound package. This is what I use.
