    LEARN HOW TO MAKE COCONUT MILK + A CHOCOLATE HOJICHA CHAI TEA RECIPE TODAY!
    LAY HO MA! This is a recipe worth cozying up to - it's chocolatey, sweet, rich, and really full-bodied. Join me in this episode and learn how to make a delicious hojicha chai tea plus the best homemade coconut milk from scratch today!
    COCONUT CASHEW MILK INGREDIENTS:
    8 cups filtered water
    250g coconut meat (mature coconut)
    pinch of salt
    1/4 cup cashews
    COCONUT MILK DIRECTIONS:
    1. Blend 6 cups of filtered water with the coconut meat and a pinch of salt on high for 3-4min (use warm water if not using a high powered blender)
    2. Pour the coconut milk through a milk bag and into a large bowl. Squeeze out the liquid and keep the coconut pulp for future recipes
    3. Rinse out the blender. Then, blend the cashews with 2 cups of filtered water on high for 45 seconds (soak the cashews overnight or boil them if not using a high powered blender)
    4. Combine the cashew milk with the coconut milk (not necessary to strain through milk bag)
    HOJICHA CHAI TEA INGREDIENTS:
    2 cardamom pods
    1/2 tsp coriander seeds
    1 star anise
    1/4 tsp all spice
    3 cloves
    1 cinnamon stick
    1/4 tsp black peppercorns
    10g dark chocolate
    pinch of salt
    small piece ginger
    1/2 tsp vanilla extract
    1 1/2 tbsp maple syrup
    2 cups coconut milk
    1 generous tbsp hojicha
    HOJICHA CHAI TEA DIRECTIONS:
    1. Heat up a frying pan to medium heat. Add the dry spices (minus the salt and hojicha) and toast for a couple of minutes
    2. Set the cinnamon stick aside and transfer the rest to a pestle and mortar. Coarsely crush the spices and transfer to a heat proof bowl
    3. Add back in the cinnamon stick along with the remaining ingredients
    4. Heat up a little bit of water in a small saucepan. Then, place the heat proof bowl on top using the steam to heat up the milk
    5. Stir occasionally until the milk is hot. Then, turn the heat off and add the hojicha. Give it a stir and let the tea steep for about 45 seconds
    6. Place the cinnamon stick into the serving cup. Then, pour the tea into the serving cup through a strainer

    Also had a nut milk business myself! Happy to hear you did too! In indian cuisine we make a ton of coconut milk so I learned how to make it from my mum, so it's about a 1:1 ratio of coconut meat and water, I think you used a lot more water. Also start with half the water first, warm water like you said it needs heat to break down but you don't have to rely on the heat from the motor. Then add the other half a blend. It doesn't need to be blended for longer than 30 seconds each time if you use the warm water and less water.

    Caribbean countries usually use that coconut milk in their gastronomy, in Costa Rica, for example, they prepare Rice 'n beans and in Cartagena, a sweet rice made from that coconut milk.
    It is a legacy from Africa

    This is Exotic cha. I know of adding coconut milk to coffee but not tea. Another exotic chai / tea is kashmiri cha I had at a house warming party. Its called Kahwa made & served in a samovar. It has a reddish tinge & has all these spices & saffron plus nuts in it like almonds

    Just FYI, Chai is the Indian equivalent for the word Tea. So Chai Tea would translate to Tea Tea.

      Hi Tanya, Hojicha is a type of tea leaves, and totally different flavor than chai. I think Wil put the " - " in the title to make a play on words - they are both awesome teas though!! Happy holidays :))

      If a high powered blender is not available, you could simply make the cashew milk. Soak them over night or in hot water for a few hours before blending.

    I’m an avid coconut milk fan and I’ve understood that soaking the coconut pieces in room temperature water for 30 minutes, softens the pieces and ensures better milk and oil extraction from them.

    Will, the recipe is superb! My whole house smelled mouthwatering when I started grinding the toasted spices. Yummy! So far I know only matcha and genmaicha (any suggestions how to drink it pls), but hojica is a surprise! Keep the drinks coming😂 Thank you!

      Genmaicha, I think you brew it with water that is just before boiling. Add a few grains of sea salt if you have it. Drink plain. It's good with sushi, Japanese food, or by itself.

    I'd love a recipe for oat/rice horchata. The oat would make it creamy and the rice more authentic. I've tried making horchata but it wasn't very good. Maybe you could work out some kinks, Wil?

    Greetings from Germany. Could you heat everything up straight away in the pot instead of putting it in an extra bowl and then heating it up? I find your dishes very delicious, but unfortunately I don't always get all the ingredients. So sometimes I dare to change things up.

    Tbh, the cinnamon is way too much. It will overpower the chai. However, I don’t see you boil it for long. That might help. 🤔

    There's no such thing as chai tea. It's westerners that coined this word. Chai is Hindi word for tea that's it!

    We make the same traditional tea and coffee with coconut milk but we don't boil the milk. We add the sugared milk into the decaution just before we serve the tea.
