Indu Puri Go to Noor Mohammedi in Mohammed Ali Road. You will get Nihari and some excellent masala powder.

its very rich badshahi dish, emperors were using such rich dish in those era... as we should have such digesting power to have this dish.
Note: instead of GHEE, sanjeev would have use normal cooking oil for perfect taste i guess. happy cooking
IF this dish is cooked in normal oil or olive oil the sole purpose of creating this dish is defeated. This dish is definitely not for the faint hear ted calorie conscious people. I suggest a good 1 hr cardio next morning to counter the calorie effect of this dish :)
haaa...True .... very true kumud that's reason i suggested sanjeev, and kumud you said well but since original or pure olive oils are very expensive in the market so this dish is not suitable for commercially as cost will increase immediately. .. but you consider about the taste so the taste are alwasys available with normal cooking oils.
Note: now a days chefs are using olive oils and those are not original oil, company mixes with other oils, for try purpose please make any type of curry and keep in the reftigerator after next few hours the shape of dish will change like using ghee dish. Pure olive oils taste sre always bitter.

My apology for the criticism, but "Onions" are "NEVER" used in Nihari while cooking.
Onions are ONLY used as "Tarka", if needed
Take it from a Nihari enthusiast. Nihari is one of the very few dishes that I know about for sure and in details.

I have heard a lot about Nihari but have never tried to make it. What would I like to know what was the meat you used to make the stock, that was not clear in the video. Also I am sensitive to wheat-flour is there and alternative way that you can recommend to thicken the gravy?
You can use corn flour
The meat is that of Lamb. You can use corn starch instead of wheat flour.
+Layla Summers - I make this with potato, peeled and cut into cubes. It thickens the gravy and tastes much better than wheat flour. Don't use corn flour, that's often contaminated with wheat flour
Lamb trotters for the stock
colour of masala which is used in dish and which one is prepared in mixer grinder are totally different. so I think both are not same.
