    I don't have a char broiler. Will use the ingredients to roast my Holiday turkey in the oven. I keep mine fully wrapped in aluminum paper so that the meat does not go dry at about 365° for about 2.5 to 3 hours. With about 20 to 30 minutes to go, I will unwrap the meat so that the skin can get brownish.

    Do not cook until 165. Pull it out before it reaches 165 because it will continue to cook as it rests. Pulling out at 165 will make it dry

      @@inkbomb3036 160 would be perfect then let it rest for the same amount of time it took to cook. 2 1/2 hours cook = 2 1/2 hours rest

    For my gravy, I lightly cook the flour first with butter before adding the drippings and stock. And for extra savory flavor I add ground coriander.

      It is because he pulled it out at 165, it continued to cook and go above 165, drying it out

    Tried this for Thanksgiving. It worked great! The only problem was that my meat thermometer didn’t work so I had to use the time measurement based on weight instead of temp.

      It would be worth it to get another thermometer. It's good it worked out for you doing it time based, but you want to pull the turkey out before it hits 165 so it can rest. It will still cook another 10 degrees or so. The ultimate goal is not drying it out.

    Some ham chops inside with season kale other greens and Cali flower with croton breadcrumbs gravyed are good to in stuffing.

      No. It's propane operated. Needs to be outdoors. Cook it in the parking lot

    I do the same only thing is I brine and inject my turkeys before deep frying and it’s the opposite when I pull out at 165
