Regarding removing the T 1-11, why not just leave it on and put new siding over it?
Smart thinking, a lot of it will be left and just gone over. Using it as a backer. I'm removing it in areas so that I can get new walls installed, I know of a few areas that are getting sheared so aside from that, it'll likely stay.

First house I ever built was a custom in Santa Ynez and sided with T1-11. I never liked remodeling, too much like open heart surgery! I am loving these videos.
Good stuff. I'm curious what the total budget is for the project and if a total tear down was considered.
Total teardowns are always considered, especially by the workers. We always joke about why the customer didn't just "light a match."
