That's a great idea, considering classic cookie dough has both white & brown "sugars". Same goes for the salt, unless the cottage cheese has enough already. It seems to vary by brand.
I made the cookie dough one with lupine flour instead of almond flour-fewer carbs. It turned out perfect! Very close to cookie dough! A win for me! thanks for trying this recipe.
I bet that really helped the texture too since lupin is a bit grainy itself and it might absorb some of the cottage cheese juice since it is so absorbent. Great idea, thanks for sharing, will be trying that as those almond calories really add up.
I use the Good Culture cottage cheese for a lot of different applications. I like blending it and using it as a base for dressings and dips because of the high protein.

I also like that they have a lactose free option for people like me who are lactose intolerant. That one is 2% milk fat, but unlike most dairy products, the carb count doesn’t increase with the lower fat options. If you are concerned about it being higher fat for keto purposes, you can add a few tablespoons of heavy cream and it tastes just like the full fat version.

Also, based on your comments, I may roll them in Swerve Confectioners Sweetener in lieu of more cocoa powder. I do like chocolate chip cookies but never ate much raw dough except to confirm its taste prior to baking for quality control. Maybe use a small cookie/meatball scoop then wear plastic serving gloves to roll in the cocoa then they would be smaller too. Adding vanilla extract would be good.
I tried the chocolate truffles - doubled the recipe and added a few chopped pecans, and extra allulose, lakanto syrup and monk fruit sweetener, since you said it wasn't sweet enough. Mine turned out very sour and bitter beneath the sweeteners, and the mixture was too runny. So to "tone down" the sour/bitter taste and improve the texture, I added about 1/2 cup confectioners monk fruit and...wait for it....4 1/2 cups of almond flower! I then rolled each "truffle" in powdered monk fruit sweetener, and I think they taste great! Taste and texture like a real truffle! Thank you for your amazing videos! By the way, I make your chaffles and use them for buns whenever we have burgers. They are great! I've also made your "meatza" several times. Thank you for all your great recipes!
For the "Cookie" dough, I'd try adding some coconut flour as it's very absorbant and might help dry out the "dough". I'd LOVE to see more variations of the cottage cheese chips!! The truffles: Yeah, I was thinking a bit of Starbucks instant powder as coffee just brings out chocolate flavors sooo well. Perhaps a touch of swerve to add a bit more sweetness.
Yeah, I knew that those truffles would be mad bitter when you kept adding more of the unsweetened chocolate powder. You definitely have to add more of the keto sweet factor to overcome the bitterness. Salt helps a bit too.
Y'all could just read the phone book and I'd watch- that's how much I enjoy watching y'all!! 😂❤😂 I used to make my own sugar cookie dough to eat- sugar, butter, flour, and bit of vanilla. Then other times I made some frosting in a cup- powdered sugar, butter, tiny bit of milk, and almond flavoring. So glad those days are over!! I always felt like the addict I was, mixing up my drugs to take/eat!! Looking forward to another cottage cheese chip video. I did make some and they were okay, but just a novelty. I make the cottage cheese chips in the microwave. I use ranch powder. Yum! The only ice cream I make is cottage chz ice cream. (W/frozen berries) or chocolate & avocado 🥑 I’ve also made the cottage cheese cookie dough. :) I put cottage cheese in my eggs & pancakes. I like it PLAIN, too. w/🍅 and EVOO or Avocado oil. Basically, cottage cheese is AMAZING! 😂

I never thought to substitute cottage cheese for cream cheese. Maybe you guys could make these again but use some sugar free oreo style cookies in place of the cocoa powder. High Key does a version of them.

I did a small batch of a cottage cheese cookie dough with my homemade keto maple syrup and it turned out pretty decent, even though by protein powder is unflavored but adding some chopped pecans may have pushed me over the edge. I never add the full recipe amounts of chocolate but may give the truffle recipe a try next!

Maybe try freezing the cookie dough recipe in tiny mounds and mix it in a batch of vanilla or chocolate cottage cheese ice cream, and seeing if you can get a cookie dough ice cream, might be good.
Actually, REAL Maple Syrup is kinda watery because the maple sap that it's made from is mostly water. The thick national brands of syrup that we all grew up with were maple flavored corn syrup.

I made the cookie dough, b😊ut I only had strawberry protein powder, it was great, but I ended up adding a little bit of sour cream to really pop the flavor. I think it has a mild cheesecake flavor now. Which is really freaking good. 🎉I definitely had to add more allulose too. This is absolutely awesome, sinful and decadent. I’m going to have to be careful to not eat much at a time. I’m putting a good portion in the freezer. Hope it keeps.

Yes please on the cottage cheese chips. I've tried to make them several ways and all were a failure.
Maybe try freezing the cookie dough recipe in tiny mounds and mix it in a batch of vanilla or chocolate cottage cheese ice cream, and seeing if you can get a cookie dough ice cream, might be good.

Actually, REAL Maple Syrup is kinda watery because the maple sap that it's made from is mostly water. The thick national brands of syrup that we all grew up with were maple flavored corn syrup.

I made the cookie dough, b😊ut I only had strawberry protein powder, it was great, but I ended up adding a little bit of sour cream to really pop the flavor. I think it has a mild cheesecake flavor now. Which is really freaking good. 🎉I definitely had to add more allulose too. This is absolutely awesome, sinful and decadent. I’m going to have to be careful to not eat much at a time. I’m putting a good portion in the freezer. Hope it keeps.

I added a little salt to the cookie dough and it hits the spot. I'm also thinking that swerve brown sugar might enhance the flavor.
