I made these, *but* ... I took the stems out (didn't cut them). Then while I cooked the mushroom stems, onion and garlic (I added onions). I put the mushroom tops *upside down* in the oven for about 10 mins or so. Let all the water drain out (you'll see the water start to come out), took them out and placed them upside-down on a paper towel (to drain the rest of the liquid out, there was a lot more). Mixed the ingredients together (I used Italian breadcrumbs) I did *not* add salt at all. Breadcrumbs, parmesan cheese and cream cheese have enough salt, no need to add more. Then stuffed them and put them back in the oven. They didn't come out soggy.
you *cut* the stem off? NO! You are supposed to remove the stem completely, snap it off, so there's a cavity, so you can *stuff* the stuffed mushrooms! These mushrooms aren't stuffed, they are topped!

I"m glad you mentioned this, I thought the oven temp was a bit low too and they didn't brush the mushrooms with olive oil to crisp them up a bit while cooking, I usually "pull" the stems off for a more hallow cavity and more room for yummy stuffing.
In my experience it does work better, leaving some of the stem on doesn't let the mushrooms cook as well as pulling them off, add a tiny bit of salt with that olive you brush on so the salt help pull out some of the natural moisture the mushrooms already have. Hope this helps
