Garlic Parmesan-Stuffed Mushrooms

  • Here is what you will need!
    Makes 15
    Ingredients
    15 mushrooms
    1 tablespoon canola oil
    2 tablespoons chopped garlic
    ½ tablespoon kosher salt
    ½ tablespoons freshly ground black pepper
    8 ounces softened cream cheese
    ¼ cup Italian breadcrumbs
    ½ cup shredded parmesan cheese, divided
    2 tablespoons chopped parsley
    Kosher salt
    Freshly ground black pepper
    Chopped parsley, to garnish
    Preparation
    1. Preheat oven to 350°F
    2. Cut the stems off of each of the mushrooms and finely chop them, setting the mushroom caps aside for later.
    3. Heat the oil in a pan over high heat. Cook the chopped stems with the garlic, salt, and pepper for about six to eight minutes, constantly stirring. Be careful not to burn the garlic. Remove from heat.
    4. In a medium bowl, combine cooked stems, cream cheese, breadcrumbs, half of the parmesan, parsley, salt, and pepper, mixing until evenly combined. The mixture should be extremely thick.
    5. Space out the mushroom caps evenly on a baking sheet, upside down. Spoon a generous amount of the cream cheese mixture on top of each mushroom. Top each mushroom with a sprinkle of parmesan cheese. Bake for 20 minutes.

    I made these, *but* ...
    I took the stems out (didn't cut them).
    Then while I cooked the mushroom stems, onion and garlic (I added onions). I put the mushroom tops *upside down* in the oven for about 10 mins or so. Let all the water drain out (you'll see the water start to come out), took them out and placed them upside-down on a paper towel (to drain the rest of the liquid out, there was a lot more).
    Mixed the ingredients together (I used Italian breadcrumbs) I did *not* add salt at all. Breadcrumbs, parmesan cheese and cream cheese have enough salt, no need to add more.
    Then stuffed them and put them back in the oven. They didn't come out soggy.

      Hi just wondering what temp do you put the mushrooms in the oven for when you’re just drying them out for the 10 min??

      @@nancygemeinhardt8701 oh gosh lol I don't remember.. I think it was 350°. I think I added them in while it was preheating maybe

    you *cut* the stem off?
    NO!
    You are supposed to remove the stem completely, snap it off, so there's a cavity, so you can *stuff* the stuffed mushrooms!
    These mushrooms aren't stuffed, they are topped!

    Tried the recipe today, if anybody else is going to cook this, dont put 1 tsp of salt in the stuffing, its way too much. Start with 1/2 tsp and taste if it's alright for you.

    I use little parm and alot of colby Jack 0:56 add bacon on top and in the mixture aswell i also add garlic with the onions and a little crushed red pep

    This was the worst stuffed mushroom recipe I have ever made. I would recommend using half of the recommended amount of cream cheese. 8 oz for 15 mushrooms is outrageous.

      Yes lol I used three containers of white mushrooms for this recipe and the cream cheese filling was enough for those 3 containers (like 40 mushrooms, but they're little and go fast.. like chips lol)

      Don't add salt. There's salt in the breadcrumbs, parmesan, and cream cheese!

    I made these and followed the instruction it' turned out soggy.Would not make these again.I ate 3 and threw the rest out.

      I"m glad you mentioned this, I thought the oven temp was a bit low too and they didn't brush the mushrooms with olive oil to crisp them up a bit while cooking, I usually "pull" the stems off for a more hallow cavity and more room for yummy stuffing.

      In my experience it does work better, leaving some of the stem on doesn't let the mushrooms cook as well as pulling them off, add a tiny bit of salt with that olive you brush on so the salt help pull out some of the natural moisture the mushrooms already have. Hope this helps
