Healthy Vegetarian Sweet Potato and Red Lentil Curry

  • If you are looking for easy, healthy and very tasty meal that is ready in about 30 minutes then this red lentil curry is for you. Made with wholesome ingredients, full of health promoting herbs, aromatic and very satisfying.
    You only need a handful of ingredients. To avoid ingesting harmful chemicals such as pesticides, synthetic fertilizers etc please use organic ingredients if possible. Your body and the planet will thank you :)
    For this delicious meal I used:
    - 2 cups red lentil
    - 2 medium sweet potatoes
    - 2 small red onions
    - a 400 ml can of coconut milk
    - about 2 inch fresh ginger
    - 1 long green chilli pepper ( medium hot )
    - 1 large head of garlic
    - 2 heaping tablespoons tomato paste
    - about teaspoon of each : fenugreek, coriander, cumin seeds
    - 2 teaspoon garam masala
    - salt, pepper to taste
    - about 3 - 4 cups of water depending on how thick you like your curry
    Served with basmati rice, sour cream, cilantro and chilli pepper slivers.

    Hello Basia from the UK.
    'Discovered' your channel two days ago and made this curry tonight. Loved the video. Made it all very simple to make. Thank you. Lovely curry Very nutritious. I have 2 or 3 curries a week and this is now on my 'repeat' list.
    (I've also put my bulgar wheat to soak on Day 1 as I am making your Bulgar bread. Thank you so much. Peter.
