    Nando's is a very popular fast-food chain founded in Johannesburg, South Africa in 1987 with over 1000 outlets in 35 countries that specialises in flame-grilled peri-peri style chicken. It is a great example of how food recipes are born out of multi-cultural bonds, although in this case it is a Portuguese colonial past.
    Peri peri's origin is from a chilli known as the African bird's eye chilli. We tend to think of peri peri as the actual sauce or seasoning, but the chillies are mixed with garlic, salt, paprika and herb to make the seasoning and then mixed in to olive oil, lemon and vinegar to make the sauce.
    Ingredients:
    1 chicken - 2 kg
    1 Tablespoon - Olive oil
    Peri peri sauce:
    Garlic - 5 cloves
    1 Small piece of ginger
    2 nos - Red chilli
    1/2 - Lemon juice and zest
    2 stems - Parsley
    2 stems - Thyme
    1 1/2 Tablespoons - Paprika powder
    60 ml - Red wine vinegar
    6 nos - Dry chilli
    5 Tablespoons - Olive oil
    Salt - to taste
    Potato wedges:
    2 nos - medium potatoes
    1 Teaspoon - Paprika powder
    1 Pinch - Salt
    2 Tablespoons - Olive oil
