I use rice flour only to fry chicken in. But not batter form, dredge meat in it and leave for about 10 15 mins. Then fry. Love seeing anything u do roland😊

Haha. I marinated them at the start but fried them in batches for the first fry to avoiding overcrowding the wok. If you overcrowd the wok, the temperature will drop and your wings won’t be fried evenly. For the second fry, since all the wings have been cooked through during the first fry, you can add everything in at one go since you’ll need to turn up the heat and the purpose is to purge out any trapped oil in the wings and also to make the skin extra crispy. I made this twice and the second time I used the following for the seasoning: - Oyster Sauce - Chinese Cooking Wine - White pepper (I used a lot.... like.... a lot) The wings came out super flavorful and crispy. Kind of reminds me of the wings sold at Old Chang Kee - when the standard were still actually good... but not anymore. Thank you Roland for sharing this recipe! Super delicious.

I'm loving your chicken wing recipe! Simple and tasty. My usual is wings with salt and pepper and slow smoke for an hour or so then deep fry.
