Bacon and Gruyere Starbucks Egg Bites (Oven & Sous Vide Recipe)

  • These Egg Bites will have you transported to Starbucks in no time. They taste pretty much identical and have a very similar texture to the Starbucks version. Hope you enjoy!
    INGREDIENTS:
    8 eggs
    16 oz (1 LB) cottage cheese
    1 pkg bacon
    1 ¾ cup shredded gruyere cheese
    1 ¾ cup shredded monterey jack cheese
    1 tbsp butter, melted
    1 tsp hot sauce
    1 tsp salt
    ¼ tsp pepper
    STEPS:
    1. Start by cooking your bacon. Get a package of bacon. Add strips to large sheet tray and space out a bit. You could use two trays if you need more space. Add to cold oven and set to 400 degrees. Set a timer for 16 minutes and monitor the bacon. Once crispy, remove from oven and add bacon strips to a paper towel lined plate. Pour the bacon grease on the tray to a bowl since we will be using this later.
    2. Grab a high speed blender and add in the 8 cracked eggs, 16 oz cottage cheese, 1 ¾ cup shredded gruyere cheese, 1 ¾ cup shredded monterey jack cheese, 1 tbsp melted butter, 1 tsp hot sauce, 1 tsp salt, and ¼ tsp pepper. Blend up until smooth and set aside.
    3. Preheat your oven to 300 degrees. Grab a muffin tin tray and a roasting pan. You will set the muffin tin in the roasting tray and add a small layer of water so that it Is just covering a little bit of the bottom of the muffin tin. Brush the muffin tin with the bacon grease so each one is coated. Cut up the bacon so that it is in a large bacon bit size. Add some of the bacon bits to the bottom of the muffin tray. Pour in the egg mixture leaving a little room at the top. Sprinkle a little more bacon on top then bake in the middle of the oven for 30-35 minutes. You want the egg bites to set so there shouldn’t be any remaining liquid present. You could poke one of them with a toothpick and it should come out clean.
    4. Remove egg bites from the muffin tin and enjoy! You could cut around with a knife if they get a little stuck.
    SOUS VIDE STEPS:

    1. Grab your 4 oz glass mason jars (could hyperlink the mason jars and do the amazon affiliate link there) and brush with the bacon grease. Add a few bacon bit peaces at the bottom. fill with the egg mixture leaving a little room at the top. Cover tightly with the lids and set aside.
    2. Get a big pot and fill with water. Set your sous vide (could hyperlink sous vide and put amazon affiliate link there) to 170 degrees. Once preheated, add the jars with the egg mixture in them to the bottom of the pot. Cook for 1 1/2 hours. Check to make sure the mixture is set. Use a knife to cut around and they should pop out pretty easily.

    Never been to Starbucks. Never heard of these egg bites before.
    LOVE THEM! Thanks for the great recipe!!!!!
    I tried both oven & sous vide methods. Love the sous vide for at home but prefer the oven method for a grab-and-go snack. I don't like carrying around a jar and spoon all day to take back home so the hand-held snacks are a better portable choice for me.

      You couldn’t have said it any better! The oven method are great for throwing them in a bag and bringing them wherever and the sous vide is a more elegant weekend treat!

    After seeing these Starbucks egg bite knockoff videos & trying all these methods, I realize that Dash Sous vide egg bite maker is the best choice if you want the Starbucks browning ( the dry heat from the lid of the machine browns the egg while the egg bites are cooking in silicone molds in a Bain Marie of sorts) The results are truly the closest I’ve found to a perfectly made sous vide egg bite.

      No prob! And you are so right! Homemade is always best and you know the quality of products being used instead of Starbucks where food quality might not be as high and more processed ingredients in them as well

      So they take the sous vide version and probably let them cool then do top shelf broiler for 1-2 min then it will get a nice crispy layer. I’m going to do this next time.

    DO NOT SEAL THEM TIGHT! they will explode due to air expansion! Seal them just enough so that water doesnt go in

    Thank you, I made a vegan version with Just Egg, Impossible's spicy sausage , two vegan cheeses, onions and bell pepper. I'm very pleased with it.

    BUT!!! You MUST move your mic away from your throat and mouth OR reduce the sound when you edit. Hearing you chew and swallow and breath through your nose was so loud and detailed, I couldn’t finish. I can’t imagine what this would be like through high quality ear buds 😂

    Sous vide may cook more evenly and have a close texture to Starbuck's, but wow do they look unappetizing; Washed out of color. (Prounounced: SOO-VEED; the "D" is not silent because it is followed by the letter "E").
