  • Today I want to show you my version of the Bacon and Gruyere Starbucks sous vide Egg Bites. Now they are not going to be exactly the same because I will be baking these in my oven and Starbucks makes them using a sous vide machine which can cost around one hundred dollar and lets be real, do we need an extra kitchen gadget that collects dust on our kitchen? My kitchen is too small for that and I don't like having gadgets that I hardly ever use taking up space. Sous vide is a French term that means you are cooking something in a "vacuum" under water for a longer period of time. The Starbucks egg bites have the perfect texture and I can't say that mine were completely the same but if you want to save some money and a few trips to Starbucks make these instead.

    Bacon and Gruyere Egg Bites | Starbucks Bacon and Gruyere sous vide Egg Bites Wannabe | NO Sous Vide Cooker
    10 eggs
    ½ cup of shredded Gruyere cheese (60 g)
    ½ cup of shredded Monterey Jack cheese (60 g)
    ½ cup cottage cheese (60 g)
    ½ teaspoon salt (2 g)
    Fresh black pepper
    4 slices of applewood-smoked bacon
    Hot Sauce (optional)
    Non-stick spray
    Preheat oven to 375 degrees F. Slice the bacon into thirds and place them on a cooking sheet that has been lined with aluminum foil. Bake the slices of bacon for 15-20 minutes or until crispy. Places cooked bacon on a plate that has been lined with paper towels and lay them flat.
    Preheat oven to 300 degrees F and place a deep-dish baking dish that has 1 inch of hot water in it on the bottom rack of the oven. This helps the eggs cook evenly and keeps it moist. Spray muffin tin with non-stick spray.
    Add the eggs, shredded gruyere cheese, shredded Monterey Jack cheese, cottage cheese, salt, and pepper (and hot sauce) to a blender and blend until light and frothy. Fill muffin tins almost all the way to the top with the egg mixture. Divide the bacon equally among all of the muffin tins and bake in the oven for 25-30 minutes, or until the center of the egg bites are just set. Allow to cool for 5 minutes, then carefully remove them from the muffin tin. Serve warm. Enjoy!

    the hot sauce is actually not what makes the egg bites darker, it’s the fact that we heat up the egg bites (which are just as pale as yours when they are in the package) in a 500°+ oven for a minute before serving. Personally, I’d recommend tenting your egg bites with foil before baking, and then heating them up in a hot oven for a few minutes when you are ready to eat so they get that golden color.
    I work at Starbucks, and these absolutely kill my wallet, since employees don’t get the food for free :( I’m so glad I don’t have to spend a ton of money on these anymore

      @ann f One of my fave perks about working at Starbucks is the free food item and drinks per shift!
      And while the pandemic was happening partners were allowed to go in and get their free food item and drink even on off days. But that ended at the end of October.
      I don’t know why they stopped that since the pandemic is still going on ☹️
      But yeah!! You should be saving money by working at starbs!! Not hurting your pockets! Ouch.

    For better flavor I found using ricotta cheese instead of cottage cheese makes them smoother, fluffier and absolutely delicious. If you're like me and don't care for bacon you can use sun dried tomatoes and spinach for an even better flavor. I added smoked gouda cheese instead of Monterey jack cheese. So many variations to this recipe so have fun.😋

    It's more of the technique of doing this. Two years ago I didn't use a blender, a water pan underneath, nor cream cheese or cottage. It basically came out like a baked egg and not the texture I was craving. Today I used your same technique just with 2 different kinds of cheeses, Gouda Cheese and Cream Cheese. I used my hand blender and the water pan underneath. Omg what a difference. They seriously look like they are from Starbucks!

    I like SB egg white bites and I only enjoy them when its out of convenience...when we travel or whenever I don’t have to cook on Sundays before church services. I will try your method. 😉Thanks 🙂

    Great video. I’ve been making egg cups for 3 years with silicone cups in my air fryer for years. The texture is exactly what you’d think it would be so the Starbucks cups difference is more the Sous vide method that makes it look smoother. But ultimately the taste is the same. It’s just the texture is different. Love the oven method with the water. Never tried that. Will have to!

    If you have a small blender, blend half of the mix at a time and combine.
    You can heat the egg mixture to about 35c before cooking in oven to stop them going rubbery.

    Yours look great. I saw where you can brush some butter on the inside of the muffin tin or whatever you're putting the eggs into. That might help give a little buttery flavor. Also he used some green onion. I guess you can make them however you like them. I didn't know Starbucks used hot sauce. I'm going to try a little of that. Thanks for the video.

    I added a little almond milk, sweet peppers, mozzarella cheese w bacon on top. ( choice of milk adds fluffiness)They turned out amazing w SB bites texture!! Baked 22 minutes. I'm not sure if my pan of boiling water in the oven worked but did it anyway. I guess the steam is good.

    Your texture is different because of the way they were cooked. Also, there is no salsa in those particular egg bites. The bacon gruyere egg bites are just eggs, a combination of gruyere and Monterey Jack cheeses, and a slice of bacon. The reason their egg bite tastes more cheesy is because it’s a mixture with basically half egg, half fat (cheese).
    You’ll never get the same smooth texture without the sous Vide process, but you’re absolutely right, they’re overpriced. This is a great alternative for those who want something similar at home, and don’t have a sous Vide machine. Although it’s a worthwhile purchase especially for meats! 😊

      Actually, if you sit the muffin tin directly in the water bath and tent it with foil you get the texture. Just sitting the pan of water on a separate shelf won’t do it.

    This recipe is good.. I make it often, but it can't compare to SB egg bites. Although expensive, i still get SB egg bites from time to time .. they are delicious!!

      True, you really need a sous vide machine to get that true Starbucks texture. Some are relatively inexpensive to get so its possible to get close to the exact thing. Maybe one day I'll do it if I get a machine.

    Yours look great! I think healthier than SB's. I just tried them and they came out like yours. Next time I will try Ricotta. I bet SB's adds butter to the bites, as my hands are always so greasy eating them!

    Made these this morning because I’m definitely not willing to pay $5 for egg bites every day, even though they’re my current obsession. I used sausage instead of bacon and a mix of different cheese since I was trying to use what I have at home, and they were great! Definitely not the same texture (except for the ones in the middle of the muffin pan) but that’s okay as I’m not willing to spend $100 on a kitchen gadget that I won’t use much. Regardless though, they hit the spot! Any recommendations on how to reheat these out of the freezer without giving them time to defrost?

      Oh I love how you are using what you have on hand to make these at home! I wish there was a way to get that texture that the Starbucks ones have down because that would be amazing without the machine. Maybe place them a few hours or over night in the refrigerator to thaw out or just place them frozen on a cookie sheet and wrap them in aluminum foil (so they don't dry out) and heat them up in the oven at 350 F until they are fully warmed.

    Those egg bites are awesome to go as well, and I don't even bother heating eggs up if I make them kind of like that and I have somewhere I have to go. I just grab my pre-made muffin shaped eggs and head out to wherever I have to go.
    I recently steam cooked two eggs in a Ramekin inside a pan on top of a trivet over some water to make it look like when I fry eggs but put water on the side and put the lid on so that it looks like over easy without having to flip it. I couldn't believe how moist and tender those eggs were! The only problem was the yolks were hard but that was because I erred on the side of caution with the time since I hadn't done it that way before and wasn't sure how much time I would need. I figured I would start with more time and then cut off a minute at a time each time I make them until I know exactly how long to make them just the way I like them: whites white but yolks good and runny!

    I think cooking them in a water bath in a low and slow oven would help the texture. Cooking fast in a tin where heat hits from all sides is drying the egg out/making it fluffy.
    Just thinking about how gourmet scrambled eggs are cooked low and very slow (think Gordon Ramsay) and the eggs come out creamy and soft. But if you use normal heat, your scrambled eggs have more of a texture of an omelette.

    I know it sounds expensive and all good if you're trying to Crave from eating unhealthy food it's better than eating something from McDonald's and it does kind of hit the spot as far as everything for more food and unhealthy snacks

    Also if you cook it in a silicone mold it’ll be darker I don’t use silicone but if you want it darker that’s how you get a darker.

      @@LydiaApril I finally tried it out...forgot to add the monterey cheese! I did blend the cooked bacon with the eggs and cottage cheese, salt pepper and chilli powder. I recommend blending the bacon, the egg bites have a bacon flavor. But its missing the cheese so its kinda not great and not good..

    Baking them changes the texture. You need a sous vide appliance for that texture.

    Actually yours are healthier. You should check out the study of what is in an egg launched by panera bread to see how their competitor SB makes breakfast. Ill never eat SB food again after that. Yours are perfect and made of actual food.

    Sous vide may make sense for a busy home cook; pop it in the bath and go on with your day then come back to whatever succulence is in that plastic bag. But how many times does a home cook use such a thing? Not my cup of tea as there's little culinary skill in bagging and bathing. And I'm not in the habit of buying udder or tough cuts of meat (and if I did, my pressure cooker is always here). So no iRobot, you're not getting some space in my kitchen!

    They arent soft, because you didnt put them into the water bath. You have to put the muffin tin directly into the water pan, so they get nice and soft. 👍

    So when you bake them they are no longer sous vide. Instead these are mini frittatas. The water process changes the way the eggs are cooked in a sous vide machine. However, good job.

    Your texture was off because there is no way to duplicate the texture obtained using the even, equal, controlled temperature of a Sous vide in an oven. You will never duplicate it without the proper equipment.

    1st thing you can get a Sous vide at Walmart for $50 that works great and second you didn’t get the same texture because you didn’t Sous vide them.😁

      You should look up Sous vide it’s very versatile and is small in stature but does a lot especially for tough cuts of meat.

    Fwiw. Yes, everyone needs a $70 sous vide.... There isn't another appliance in the kitchen that can do what it does, the way it does it... If you aren't sous viding every steak, you're missing out.
