I just did this recipe and my family loved it. I put a little twist on it and added bacon pieces into the mixture and on top of the tater tots after coming out the oven then added the cheese. Then I returned the casserole back into the oven to let the cheese melt and I let it rest for 15 minutes and it was an amazing dish. I look forward to making more quick and easy recipes like this one.😊

Three suggestions: 1. Open the can of Corn, and drain the water into the measuring cup, and then add enough water to bring it to 3/4 of a cup - use that when you add your Taco Seasoning. 2. To stretch the recipe, along with the can of Corn, add a can of Pinto Beans and a can of Kidney Beans. They are high in protein, and cost less than ground beef. Again, drain the water into the measuring cup. 3. Instead of Tater Tots, which are expensive, peel and slice up Potatoes into thin slices- put them on top, in a thin layer, and cook in the oven until they are soft - then put the cheese on top, and finish cooking it. These three suggestions will allow you to reduce the price by a few dollars, and at the same time, you can stretch it to feed several more people.

For those who have salt issues (high blood pressure ain't a joke), the Campbell's soup might not be the best idea. In that case I would recommend making a cheese sauce via a roux. Melt 2 tablespoons of butter in a sauce pan, and add 2 tablespoons of flour, stirring the flour into the butter. Once the mixture just starts to lightly brown, whisk in about 1 cup -1 1/2 cups of milk, a bit at a time. If you add it too quickly, the flour will clump up. Once that's all added continue to cook until it thickens up a bit. Remove from heat and add about 1 1/2 cups-2 cups of cheese (cheddar and/or monterrey jack recommended), again stirring it in bit by bit so that it melts in with the milk mixture. The more cheese (and/or less milk) that you add, the thicker the sauce will be, but if you try to go too thick, the cheese won't properly melt. If you try to go too thin, it'll taste too much like milk. Once smooth, add a small can of Rotel diced tomatoes and peppers (or equivalent brand), drained. As long as you aim for about 3 cups total (precooked) of cheese and milk, this nacho cheese sauce should end up about the same volume as the two cans of condensed soup, and should have quite a bit less salt (especially if you can find the no salt version of Rotel). You might also want to use individual spices rather than the taco seasoning for an even healthier option. I would recommend garlic (powder or minced), onion (powder or minced), cumin, smoked paprika, chili powder, and a bit of oregano. Black and/or cayenne pepper (or diced jalapenos) can be added if you want to spice up the heat. You can salt the cheese/meat mixture to taste (if necessary) before you pour it into the pan.
Grate your own cheese, it’s super easy and it tastes so much better than the shredded cheese you buy. They add extra ingredients to shredded cheese. I love this recipe, it’s looks amazing.
David Horenstein, I was thinking the same thing...I always grate my own cheese due to the cellulose power (aka: wood pulp🤮) that is added to pre-shredded cheeses...Not only does freshly grated taste better but also melts better because it's 100% cheese! 😋
