He’s singing in the native Freljord language which is a fictional region in League of Legends lore. It’s where Volibear is from. I think the language is based on Scandinavian languages. The singer is actually the lead singer of a Norwegian group called Wardruna.
Volibear takes the form his different worshippers see him as.
Where he shows up for the Winter's Claw in his basic skin, he's dark Urisine see him as the Thousand Pierced Bear.
He's also massive, he's almost Kaiju scale in most cases but like his other Demi-God siblings Orn (brother) the God of Blacksmiths & Anivia the Cryo-pheniox (sister), he most likely can change sizes.
In the Call trailer you saw his Followers, the shaman attack the Winter's Claw because they were after a Magical cauldron Orrn made.
The Shaman slaughtered Orn's followers to take it because of Volibear's survival of the fittest mentality, being angry with Orn for creating something that would make humanity weak.
I unapologetically filk this guy's aesthetic for one of the gods in my D&D setting. Tyrwulf, the god of savagery, blizzards, starvation, and cannibals, is a god who very much matches Volibear in his disdain for civilization. He mated with the depraved goddess Tarkan'Nala, and then tried to eat her, resulting in Tarkan'Nala's father showing up and slamming Tyrwulf into a mountain so hard that his legs were trapped in a magma chamber and charred to the bone. He's the progenitor of the smilodeon race, who see no issue with slaughtering and eating others like animals, and the wendigo, the infamous spirits of selfishness and cannibalistic hunger.
He has an eternal grudge against Balthus, the god of winter and frost giants, because on the first day of winter, Balthus always manages to bury Tyrwulf in a snow drift for fourteen days. As a result, the first fourteen days of winter are mild and marked with gentle snowfall. He also still wants to eat Tarkan'Nala to steal her dominion over monsters and the misbeggotten.
I know I'm late on these but, it's funny you said the different skins made sense as gods like Zeus can change their appearance. During Volibears rework the devs held a poll to see what people wanted him to look like and the thousand pierced bear won that poll, however it's not really in line with Volibears theme in general so they chose not to use that as his base skin, however as it did win the poll they made the skin for Volibear as well and gave it away for free to everyone that had volibear before his rework (and perhaps a while after too). But the greatest thing is when making this skin they put a lore reason in it as that the tribe that reveres Volibear the most actually see him as the thousand pierced bear.
If you decide to do Ornn, I would recommend you'd find Ornn's song as well. The song is a tale told in the Freljord like a fairytale, and is the base motif in his champion theme.
If you want to really feel the full breadth of Riot Music's skill, I'd recommend Aphelios and Vi and Renata Glasc.

If not then here are some of my top champion theme recommendations. Jhin, Taliyah, Aatrox, Aphelios, Fiddlesticks, Renatta, Vi, Lucian. Honorable mention: Ornn (he is Volibears big brother), and Welcome to Planet Urf (its not a champion theme, its an event theme but godlike nonetheless)
Volibear strikes me as somewhat similar to Ragnar from Red Rising

the language is one of league of legends original btw. they have 5-6 own languages based on the regions. Volibear is from Freljiord so this is Freljordian. this sounds like greek but it isn't
its not really greek at all its a combination of multiple nordic languages

Since you did Volibear, you should definitely listen to his brother Ornn's theme next. Anyway, I love your insights and attention to detail.
The singer is Einar Selvik, he is a famous Norwegian singer and has a group called Wardruna. If you like him I suggest hearing to some of his songs.

Volibear lore changed somewhat, originally he was a Shaman of the Ursine tribe, who were isolated, grew peaceful and complacent
After seeing a vision of future conflict, he managed to take over as the leader of the tribe. then he joined the league .many champions of nations and races joined the league to protect their home, ... this has been a less mentioned detail in more recent characters

Volibear gameplay has become much more impressive while keeping to similar but better playstyle
basically has a chase down and stun,
a slash and bite two in one,
delayed lightning that hurts enemies and protects him if he is in the landing zone
and a SLAM DUNK + POWERUP TRANSFORMATION
Absolutely love Volibear, and hes certainly the one i have most experience with in league. I rock his prestige duality dragon skin, and i personally think that would be the pinnacle of what his demi-godhood would look like, a being both halves chaos/war and peace/tranquility.
The idea behind some of the "dragon skins" is that some new ones were released back in october or around that time and were themed as "Dragonmancers," essentially the champions given these skins were gifted a power by several different types of dragons, Volibears blessing being from the "Duality Dragon."
Some of these skins have descriptions to them, and prestiged versions have a slightly expanded description form the normal variants.
Post vid edit : Volibears in-game Prestige model is BEAUTIFUL and has a few moving parts, and his ultimate changes his form to more look like some celestial space/wraith bear.
You got it though, Volibear is some form of god in this game's lore and its version of Scandinavia, so apparently they use a mishmash of Scandinavian languages for the song, from what I heard.
The language is "ancient Frejlordian", a language created by Riot Games by mixing various Germanic languages, mostly Scandinavian languages.
He's theme is just soooo badass i fucking love it!

If you watched The Call cinematic, you'll have seen a white bear wielding lightning. However, that is not Volibear, but one of his followers, an Ursine. You can see Volibear's silhouette in the sky when the lightning strikes. You can also see Ornn, the Ram god and Volibear's brother in the cinematic.
Also, since he's a demigod, Volibear takes the form of what his followers believe in. So unlike most champions, he has two canonical skins rather than just his default. The Thousand Pierced-Bear is his other canonical skin and is an eldritch interpretation of the horror he is. Since he's essentially a corrupting monstrosity to people.
That's actually another thing to keep in mind though when checking out Champions. For most Champions, none of their skins are canonical to their lore. A few champions have lore relevant skins, like Volibear with Thousand Pierced Bear and Udyr with Spirit Guard, but most champions just have their default skin. However, some skins have their own stories, like with Star Guardian or Odyssey.

He's a God, he and his siblings formed the ice area of the league world. He's huge. Volibear isn't his real name. Another older name is valid which you hear mentioned in the song. But his real name only he knows. I play him a lot he's not a fan of taming the wilds or civilization.

If you feel like it Dave, do one of Sejuani. Her lore is incredible, and you saw her in The Call.
She is the Warmother of Frejljord and an archenemy of Volibear.
In her story a couple of times she ties her braid with the guts of a wolf to swear unto one of the aspects of death, that if she fails her task, he can claim her.
One time she does it, 100 of her men are under siege from the Demacians, and she swears to Death himself that if any single one of her men dies this day, he can claim her.
She still rules the Freljord.
