Low Sodium Shrimp and Broccoli "Fried Rice" - Fast & Healthy Version

  • We love Chinese takeout but realize they're not the healthiest meals for us anymore... so I took to experimenting if I could make healthier versions at home that still hit the spot. And for us, this is a jackpot recipe using EVOO, a very small amount of low sodium soy sauce, a piece of fresh ginger and some sesame seeds for depth of flavor.
    To give the brown rice a bit more of that "fried rice" flavor, I whipped two small eggs and fried them in the pot before mixing with the cooked rice. Then everything was mixed together, and BAM! A perfectly healthier take on the original... just enough flavor to satisfy our urge for takeout with A LOT less sodium to satisfy doctor's orders!

    Spot on! Here it is already 6:38 in the morning and this meal has just made me oh so very hungry for something like
    this, never mind going at some breakfast! I do not eat fried rice meals that often and perhaps Margarette and John
    the official taste testers have just triggered my taste buds as well! Nice video and thanks for sharing!

      Thanks Craig - we're trying to find healthy takes on healthy takeout... and I can honestly say that once we got used to cooking without the pounds of salt these restaurants and fast food places use, you really can't tolerate that level of saltiness anymore. And that's a good thing, because we're not only saving money on takeout, we're eating better and healthier. Hope you had a great breakfast, we alternate among eggs (Vital Farms eggs RULE - worth the extra money in our opinion), Peanut Butter Puffins cereal with bananas and blueberries, and I just got into overnight oats - and thinking about sharing a few recipes, so easy and yummy!
