Oatmeal Cookies - Recipe 1

John's crew asked if I would make them oatmeal cookies, and since I don't have a favorite recipe, I turned to my favorite chef. The only differences in my recipe is that I used coconut oil to grease the pans, used slightly less sugar (in hindsight I probably should have used all the sugar it called for because these guys are addicted to sweets), and made my cookies smaller, which means I had to shorten the bake time.
I really liked them, although I'm not really a cookie person. John liked them as well but in complete transparency, he wants me to find a 100% chewy cookie. Emeril's cookies were crisp on the outside and chewy on the inside, which I really appreciated.
