Potato Leek Soup - Easy & Delicious... Another Keeper!

The prep work was easy, and the only changes I really made to the recipe was going lighter on the cream, using fresh thyme (instead of dried), and adding a bay leaf for some additional flavor. We also topped our soups with some shredded cheddar.
Delicious!
