  • Shelina Permalloo is an English cook, author and winner of the MasterChef 2012 UK TV show competition.
    Born in Southampton to Mauritian immigrant parents, Permalloo was working as a Project Manager in London when she decided to participate in MasterChef UK 2012. In the final she beat Andrew Kojima and Tom Rennolds with her final menu: octopus served on marinated fennel and ginger; mutton curry with a chilli pumpkin roulade; mango cannelloni filled with lime curd.
    After winning MasterChef, she worked in various London-based restaurants. Her first book Sunshine on a Plate was published by Ebury Press on 20 June 2013 and contains recipes inspired by Mauritius.Her second book The Sunshine Diet was published on 1 January 2015.Shelina opened her first restaurant "Lakaz Maman" in Southampton in April 2016.

    Recipe:
    500g tuna fish
    Green chilies according to taste
    1/4 white onion medium
    3 to 4 tbsp oil and extra for frying
    1/2tsp crushed fenugreek
    1tsp crushed mustard seeds
    1tsp vinegar
    Turmeric 1/4tsp
    Salt to taste

    Would be helpful to state how much to use of each spice. Fenugreek is incredibly bitter for instance, also you add very little vinegar in the video, would be good to specify the actual quantity.

    Great Vid… Always wondered best oil to use? Wanted to try olive oil as I thought would be healthier once cool?

    That's a lovely recipe... looks awesome.
    But the measurements of the spices in the recipe don't seem to be consistant with the amounts being shown in the video. Surely that's a lot more mustard seeds & turmeric than 1 tsp & 1/4 tsp respectively.

      No the recipe is not accurate at all,there should be more turmeric ,it’s very pale in colour

    Super video and recipe,Masterchef. With regards to mustard and fenugreek seeds how many teaspoonful have exactly been used ? Ditto for vinegar? Is vinegar not added after cooking?

      U can use jack fish, cod, coley, bream, my mum uses those when she does this.

      You can really use any firm fish
