    used to work at an udon restaurant with chawanmushi made fresh as an appetizer. whenever we had leftover custard at the end of the shift, we would make a batch for the staff to enjoy. nice memories!

    okay. I had all the stuff last night. I made two of these for our dinner. our bowls are bigger, thicker. but it worked!! my wife's eye lit up when she took the first bite. she said it reminded her of childhood. (drama-lady). I think it's wise to line the bottom of the steamer pot with something. a towel, or rack. they jostle a bit when steaming. SO YUMMY! thanks JOC.

    HOT PLATE GRIPPER, THAT'S THE THING I NEED. For years now, I've been just using paper towel as a barrier between my fingers and the scalding hot cups to take them out LOL

      Yes, it's great if you make chawanmushi or steamed cakes etc. Amazon didn't have it years ago when I was recommending it, and now it does. :)

    When I was in Japan I was served this dish at my boss's home, and it included a ginkgo nut at the bottom. Is that unusual?

      That is the classic way! It's so hard to get it outside of Japan. If you can get it, please add it. I can get canned gingko nuts at a Japanese grocery store...
