A tip on freezing your waffles- if you freeze them individually on a tray before you put them in the freezer bag they won't stick together! I find that that helps with their shape and structural integrity too

Oh that pasta looks delicious! I'm doing that one! Of course, my fall in Florida is much different from yours in Canada! It hit 68°F here and people were freezing! Lol! But I still like soups. I just bought some parsnips to add to mine. Yum!
Love the waffle recipe. I'll have to make it soon! I used to make a WHOLE bunch of pancakes at once and freeze them. Then: toaster pancake any time. Makes a good "take and go" fast breakfast in the car/commute. Most of the time is in the prep and cleaning, so might as well knock it out so at once.

Sweetheart, My parents cooked sweet potatoes all my life and I’ve cooked them all my childrens lives and have NEVER had one explode in the oven and I’m 61 yrs old. I have also never dried my seeds before I roasted them. I clean them salt them in the bowl, pour them out on a tray and pop them into the oven and they always crisp up.
You could sub white beans, silken tofu or partially with sunflower seeds (or a combination of these). Also, the butternut squash itself is pretty creamy, so you may not even miss the nuts if you just leave them out! In that case I would use plant milk (like oat) in place of broth and a bit of extra salt. Then make sure you use a thickener like tapioca starch or cornstarch when heating so you get a thickened texture. 😊😊
My MIL gave them to me, and they are Ball brand. I haven't been able to find them on their website or Amazon though! 🥺🥺 These are the closest I have found: amzn.to/3Sq4T7m
