    Oooh sweet potato waffles. I DO have a brand new waffle maker and a couple of sweet potatoes I haven't done anything with yet...
    A tip on freezing your waffles- if you freeze them individually on a tray before you put them in the freezer bag they won't stick together! I find that that helps with their shape and structural integrity too

    Such great inspiration in this video. I love adding warm pasta in a salad! I try to eat mushrooms a few times a week for anti-cancer benefits so today I decided to cook and freeze all of them to have on hand. Definitely will be helpful. 😊

    Hi, Maddie! I've never had a sweet potato or potato explode on me, when baking. I have heard them "scream", before, though. That's how I know they're ready, LOL.

      Hahaha luckily I never have either! (But I have heard the “screaming” 😆) I’ve had a couple viewers of this channel tell me ones have exploded on them, so it’s a just in case kind of thing. 😊

    Love your videos, I always learn something new or a different way to prepare things. I love the diversity of your meal prep items. Have a couple of sweet potatoes in the fridge from last week…hello sweet potato waffles. Have you ever cooked savory waffles and/or toppings? I’d be interested in your thoughts…

      Aww yay so glad to hear that! I have only done red lentil waffles for savory, a take on the red lentil wrap recipe. I do also have these savory pancakes: ruclips.net/video/oijem-J2pH8/видео.html but I'd like to do more with savory potato/ sweet potato waffles... I see those are quite popular, I just haven't tried any yet!

    Oh that pasta looks delicious! I'm doing that one! Of course, my fall in Florida is much different from yours in Canada! It hit 68°F here and people were freezing! Lol! But I still like soups. I just bought some parsnips to add to mine. Yum!

    Love the waffle recipe. I'll have to make it soon! I used to make a WHOLE bunch of pancakes at once and freeze them. Then: toaster pancake any time. Makes a good "take and go" fast breakfast in the car/commute.
    Most of the time is in the prep and cleaning, so might as well knock it out so at once.

    Great video! Love the variations, tips and tricks. BTW, you get your Instant Pot pan looking new again with some Barkeepers Friend cleanser. It works great on stainless steel pots as well as removing stir marks from porcelain.

      Thank you! Yes, I just ran out and need to get some more. I was so surprised these marks came from putting the liner in the dishwasher which I had done so many times before! Argh. 😣

    Sweetheart, My parents cooked sweet potatoes all my life and I’ve cooked them all my childrens lives and have NEVER had one explode in the oven and I’m 61 yrs old. I have also never dried my seeds before I roasted them. I clean them salt them in the bowl, pour them out on a tray and pop them into the oven and they always crisp up.

      You could sub white beans, silken tofu or partially with sunflower seeds (or a combination of these).
      Also, the butternut squash itself is pretty creamy, so you may not even miss the nuts if you just leave them out! In that case I would use plant milk (like oat) in place of broth and a bit of extra salt. Then make sure you use a thickener like tapioca starch or cornstarch when heating so you get a thickened texture. 😊😊

      My MIL gave them to me, and they are Ball brand. I haven't been able to find them on their website or Amazon though! 🥺🥺 These are the closest I have found: amzn.to/3Sq4T7m

      I like both Anthony's and Trader Joe's! This is the one I have now: amzn.to/40rSkdy and they also have a non-fortified version if you prefer that: amzn.to/40oXmHQ But yes, some brands definitely taste different, so it might be worthwhile to test a few to find one you like. 😋
