Salted caramel:
200g (approx. 1 c.) Japanese sweet potato previously baked at 400F for 45 min.
1 1/4 c. soy milk (or plant milk of choice)
1/3 c. maple syrup
1/8 tsp. vanilla powder
1/8 tsp. caramel extract
Pinch of flaky sea salt
Optional flavor variations:
Chocolate chip: Omit the caramel and add 1/4 tsp. vanilla powder (or 1/2 tsp. vanilla extract) + chocolate chips
Chocolate chip cookie dough: Omit the caramel and add 1/4 tsp. vanilla powder (or 1/2 tsp. vanilla extract) + chunks of cookie dough from this recipe video: • Only 3 INGREDIENTS Nee...
Double Chocolate:
250g silken tofu (approx. 1 c.) (amzn.to/4dJy78x)
105g (approx. 1/3 c.) maple syrup
30g (approx. 1/4 c.) cocoa powder
180g (approx. 1/3 c.) melted chocolate (Great Value and Kirkland chocolate chips are both accidentally vegan! Or feel free to use another vegan chocolate of your choice)
Pinch of salt
Pistachio:
1 c. chickpeas (drained and rinsed)
1/2 - 3/4 c. soy milk (or plant milk of choice)
1/2 c. maple syrup
1/4 c. pistachio butter
1/8 tsp. almond extract

Hahaha that is exactly how I felt before I bought one. 😂🙈 I already had a cuisinart ice cream maker but honestly the Creami makes it soo easy. Even though we mostly just use it in the summer I already feel it’s worth it. 😅 It’s a pretty cool gadget!

I have just acquired a bread maker ( second hand, paid $8 for it. And a toaster oven. Appliances require SO much space!)
I burnt the kids out on the banana ice cream. Made with just ripe bananas frozen and peanut butter, maple syrup.

But I’m sure your grandkids would love having some more ice cream options. There are tons of recipes you can make in it! I’d keep an eye out for one 2nd hand as well! 🙌🏻🙌🏻
Soaking chickpeas in some Baking Soda Water really made my last batch of chickpeas super smooth and soft! Even my daughter who is very picky about texture LOVES these new chickpeas.
By the way, SO happy to see you back more often and you look so happy with your little one.

The best ice cream recipe Ive ever seen is so much better and dependable than every other one ive come across that now I use it as a base for every recipe regardless of what flav im actually doing. It is from a 1975 cookbook and has just 6 ingredients: sugar, soymilk, (pure) vanilla, oil, salt, and lecithin (plus the ice and rock salt to run your machine, obviously). This recipe never fails.

Ice Cream Tip: Adding too much Maple Syrup or any other sweetener it becomes softer faster. With Syrups I usually don't add more than a couple of Tablespoons because it can cause this issue.
Oh wow I didn’t know that! I’ll have to try it with granulated sugar and see if I notice a difference. 😊
The reverse is also true... People tend to undersweeten ice cream recipes and it messes with the chemistry and makes your ice cream hard and icy.
Also about the vanilla powder. I've used that bc it was called for in a recipe once, but it's pretty hard to find. I got mine from a brewery supply store, but I don't think that place still exists. I actually think the alcohol content is important to the vanilla in this case though, because that helps keep your ice cream softer. My mother used to add actual rum to her ice cream recipes, but real vanilla (like the Watkins brand which is what I tend to use) is probably fine. (My grandparents used to dribble Kahlua as a topping over ice cream but I don't think it had much to do with the chemistry of the ice cream.)
@@stiobhardgruamach1368 Very true for both of these things! I've heard that about alcohol, but haven't had a problem since using the Creami! And you can easily find the vanilla powder on Amazon. 😊 Too funny about your grandparents and Kahlua though! 😂😂
Been thinking about buying a creami. I've used sweet potato in chocolate ice cream and it worked really well, haven't tried tofu yet but you've inspired me!!!
It's an awesome machine! I've loved using it and only wish I had had more time to experiment with it this summer. Tofu makes a great base, but *especially* so in the Creami because of how you churn it right before eating it. So it breaks up any iciness!

I knew it would be! 😝 Yes definitely. If you have a high speed blender, should be no problem. If not, I’d boil the chickpeas an extra 15 mins. or so (just in water) just to get them extra soft. 😊

Glad you enjoyed! Definitely possible. 😅 You’d just need to add enough sweetener to cover the taste. I’d also recommend boiling them first for a while to soften them. 😊 I’d probably do a mint chip or pistachio since the base will already be green!

Don't have a Creami, would a regular ice cream maker work I wonder? They look amazingly delicious!
Yes, they should be fine! I have the Cuisinart and made the tofu ice cream in it last year. (And sweet potato ice creams in it the previous year!) The only thing I noticed for the difference between the two machines is that with the Creami you can always get a fresh churn if it’s gotten icy in the freezer. So with lower fat ice creams I noticed they can tend to get icy after a while in the freezer and that’s why I prefer it over the Cuisinart for these types of ice creams. However, letting them sit on the counter to soften before serving should do the trick! 😊😊

@@SimplicityRocks Yes! Have made strawberry with it and it turned out great too. I think many flavors will work with it as it’s a pretty neutral base!
Are the Great Value semi sweet chocolate chips vegan? Also, the Watkins caramel has alcohol in it, yet you mention a plus of using the vanilla powder. I really want to try the sweet potato caramel recipe. Any thoughts on alt caramel flavoring? Thanks for the great video.
They are! (At least the ones in Canada are! Haven’t double checked US) A follower turned me on to them when I shared that the Costco ones I used to buy are now sooo expensive! 😭 Great value are slightly cheaper. 😊
Yes the Watkins does have alcohol but the taste isn’t nearly as strong as in vanilla extract. Maybe because I’m using such a small amount? Not totally sure why but I can’t taste it at all. There are lots of brands though if you don’t want to use that one! Or you could add in date caramel for a similar whole food based flavoring. I’d purée about 6 softened dates with just enough plant milk to get it smooth and add that to the mix. Won’t be exactly the same but it might make a good sub! 😃
