Have you tried goose fat to make your roast potatoes…pure heaven. And if there is any left overs, it makes the bubble and squeak amazing too! My family fights over the crispy bits, so I now make patties and fry them up so everyone gets the crispy bits that taste so much better because of the goose fat. Duck fat works well too, out goose fat is so much better.
My mother made those all by hand until the late 1960ies. Than she got a machine to grind the potatoes. We where two adults and six children! Anyone can imagine how much work it was. And we ate a lot of potatos! Every sunday "Knödel" from raw potatos. The same work. No lemon juice! Our potato pancakes and potato dumplings turned out "green". I’m going to try it your way by having half blended and half grated. Mine are very good but I think yours might be a step up… I love potato pancakes.

I use basically same ingredients that you do.. 😊 My mother and grandmother made these and they were German.. My trick for keeping the potatoes from getting brown is after grating pour over them cold water then I let them set while grating onions.. It Helps take out some of the starch also.. just drain and press out the water.. Then add other ingredients.. I have gotten creative and added carrots and squash grated also.. But Nothing Is Better Than A Simple Potato Cake!. 😋 PS I use bacon grease when I have it or avocado oil.. 👍
I found this fascinating. We visit Germany every few years and I always enjoyed the potato pancakes, as does my husband. I am going to surprise him and try to make them at home using your recipe. May I ask, please, as your recipe is far bigger than we could eat in a day or two, can these potato pancakes be frozen once they are cooked or even partially cooked as you did some for reheating the following day, since the frozen ones need to be thawed before warming through. This is basically the same recipe I have used for more than 40 years. I do 2 things differently; 1. I just chop the potatoes into cubes, then into the blender. I see no reason to go through all the extra work and cleanup involved in grating them first. 2. I fry my potato pancakes in good old bacon grease. They still fry beautifully and they have a nice touch of bacony flavor.
Just love your recipe for potatoe pancakes. Our german family loved them, but my mother's were more mushy looking than yours (she used the blenderized potatoes only, without adding grated ones) and hers were more grey than yours.... probably she never added lemon juice like you. Yours look so good that I have to try them!

Oma always used a blend of 50/50 grated to pureed potatoes and also added baking powder to the dry for a bit of lift. My adaptation's have been to aďd MSG and to sub wheat flour for rice flour for a nuetral flavour or chickpea flour which will alter the flavourfor those with gluten issues. The chickpea flour normally I make when cooking Indian dishes as it works well.

Nice. But you want potatoes with high starch content, like russet that ultimately gives you the starch that provides the crispness that makes them so much better. Along with the cooking fat that you mentioned.
Oooh, goose fat! Yes! My momma is from Germany and she remembers using goosefat on bread because they didn't have butter after WWII. Thank you, I am definitely going to make these with goose fat. ❤

My grandfather was German and when we grated potatoes, by hand, we put them in Cold Water, no lemon juice. Then you drain them well and pat them dry before using. Had a cook-off with a Jewish neighbor and we invited our neighbors to decide, blind taste, as to whose were better. I won hands down! Made them the way I was taught by my father, whose father was German. Goose fat didn't exist in the US at the time. Since I now live in France, I can buy goose fat without a problem.

That is a great idea using the goose fat. Many years ago i learned that for the best tasting roast chicken all you need is lots of salt and a nice rubbing of duck fat. No other seasonings needed and it was the most delicious chicken flavor ever. I bet using goose or duck fat will really elevate the flavor of the onion potato pancakes. I noticed that you use the Great Value Sunflower oil, so I looked at Walmart for the goose fat. I did not find that, but I did find duck fat. Will that work as well? I would come to The Villages but I live too far away. I make hashbrowns similar to your pancakes, but I do not use a blender. Have good days!

I use breadcrumbs instead of flour. It takes flour long to be cooked and may possibly taste raw in the timing of the pancake. to donness.
