I love the dairy free cooking! Our family is dairy and gluten free and I've enjoyed learning how to cook for our unique needs. The biggest hack is cashew cream in place of heavy cream for cooking (I just blend it up before I need it), coconut cream for heavy cream in baking, almond milk (blended at home) in place of milk and tallow in place of butter. Works every time! I make all your sisters sourdough recipes with those replacements!

In Australia, some restaurants have "twice cooked" tender meats on their menu and I've actually wondered if this is what they've done on purpose. We aren't born knowing how to do all these things, and we learn so many tips and tricks by just having a go and doing. Well done. I love what you share about your journey and days. I’ve had the slow cook thing happen to me before too! My instant pot has a low, normal and high setting for the slow cooker and I tend to use the higher setting which helps. Also if something is underdone after I slow cook I’ll often just pressure cook it right in the instant pot for a few minutes. Great recipes!
You are definitely not a beginner anymore. You make cooking look so easy. I love the great ideas, recipes you try. I get a lot of ideas myself from you. I Ty for sharing. Slow cooking is wonderful, I love my crockpot. Depending on the size of a piece of meat, cooking on low, you need 10hrs or more. I hope you explore more with it. I do a flank steak in the crockpot and it's delicious

I’ve had the same issue trying to slow cook with instapot. So I stopped using it for slow cooking and use a normal slow cooker.
