This recipe can be qualified as the ultimate summer recipe originating from the south of France. it is a surprisingly easy yet delicious recipe that can be made in small or large size. you could compare this as some of of pizza with its delicious tomato and herb base but the mustardy taste makes it totally different.
In france people in the south make all kind of version of that same recipe to vary the flavors. I am giving you today the vegetarian version of this lovely recipe but the two main other things you can do it is to add anchovies or cheese on top of the tart.
Ingredients:
1 roll of good quality pre-made puff pastry
2 tbsp Dijon mustard
4 tbsp tomato sauce
4 to 5 large tomatoes
2 tsp salt
1 tsp pepper
5 tbsp olive oil
1 tbsp herbes de Provence (or dried Italian herbs)
5 tbsp bread crumbs - Хобби
This dish is to die for! I’ve made it several times and my boyfriend and I just love it. I recommend blotting the tomato slices with a paper towel to avoid excess juice or sogginess. Thanks so much for sharing your cooking talents with us!
I made this, and it came out perfect. It tasted great and looked beautiful. I had a bit left over, and it reheated well the next morning. I dropped a couple of poached eggs and a sprinkle of smoked paprika on it and it made a great breakfast!
You made me laugh about your poached eggs addition to it. I love eggs and try to add eggs to add them wherever I can.
My aunt always used to make this with the slight variation of adding gruyere (or emmenthal) slices in between the tomato and the mustard - delicious.
Made the recipe yesterday evening with tomatoes from my grandfather's garden, was perfect!
I’ve made this every week and it’s delicious! I can’t get enough of it. I’ve also made the dough from scratch - even better!
I love this dish. Perfect flavors and simplicity excels with good ingredients. Nice touch re the base on the tray. Mine came out perfectly!! Rock on stefan.
T Ryan hi there great to hear you try that recipe . I love it too so simple to make and perfect with lovely fresh tomato. Thanks for taking the time 😁😁
Your recipes are simple and authentic. I was contemplating going on a diet (again...), but now I want to make it all! Forget the diet.
I would scoff the whole lot! So simple yet so delicious looking. You're the goods, man!
I made this today (I used honey dijon) and both my mother and husband just loved it. Merci!

I made this today. I added some anchovy. It was delicious. I'm so happy that I discovered your channel. After a whole year of cooking almost everyday (due to lockdown, no eating out) learning new, good recipes is priceless.
Moi aussi
After seeing the video I knew I had to try this. I made it yesterday and it was simply wonderful. And not too complicated for someone like me who is not a great chef. We ate the whole thing in one go - I wish I had saved some to reheat with some ham for example. Great recipe, and great cooking channel. Thank you!
I feel like I can taste it! 🤤
Yes! This is such a nostalgic recipe for me. Haven't made it in years. I like a sprinkle of sweeter herbs like fresh thyme and marjoram.
Amazing! I love the simple and effective ones!

yeah it’s an amazingly handy recipe. i also make it quite often now and some different things to vary 😋😋👨🏻🍳
I love the versatility, but I have to remember that the bread crumbs are super important!
I made the tart for lunch today. Mine wasn't quite as pretty as yours, but it tasted wonderful. And it is so simple to make.
glad you liked it :o) and thanks for trying the recipe
Thank you so very much Beautiful I will cook this. Yvonne mullion Cornwall England
Made three of these so far with my bumper crop of tomatoes. It was also a great way to use my herbes de provence I brought back from Marseille last summer. Thanks for the great recipe that was simple to make and can't wait to try all of the other great recipes on your website. Thanks so much for sharing your recipes and expertise with us. ABocchino
Alan Bocchino i am glad you liked tha recipe . plenty more by category in the playlist
ooh this is great, and very vegan-friendly ! thank you for the great recipe !!!
theres butter in the puff pastry, so it isny vegan unless you use a dough without butter instead of puff pastry

I meant new, not ne. Sorry.
Really glad to hear this well done on making that recipe . And glad you liked it?🙂🙂👨🍳
I made a comment here before. I've made this tart now several times now,, and my family just loves it. I've made a couple of slight modifications in which you might be interested. I use honey Dijon mustard instead of regular Dijon. I found the tomatoes became too juicy after cooking them so now I slice them and let them drain slightly in a colander before I put them on the tart. I use panko bread crumbs instead of regular Italian crumbs. I sprinkle just a pinch of sugar over the tomatoes. I take about 1/2 dozen celigne mozzarella balls, slice and scatter them over the tart. Since I can make this I don't care if I never eat pizza again!
+Pammy B wow yeah thats just so easy to make and its great that you are coming with your own variation. mozzarella sounds great😋😋
Interesting changes. I love this recipe also. My wife, and especially mother love it. I love the panko idea. I dealt with the juicy tomato problem in 2 ways: more bread crumbs, and longer cooking time. I really never notice a doubling of bread crumbs as they're so neutral anyway. Also, I covered the outside crust with a loose foil ring to avoid too much browning and let it cook another 15 min. I make the outside crust smaller, so I can focus on reducing the non-foil covered tomato portion of liquid. I actually layer tomatoes even denser than chef Stephane did, but with good results.
I would never had known about this recipe if it wasn't for chef Stephane.
In my humble opinion tomato is one of the superfoods.
So pretty i love it!
Yummy
This looks incredible! I think I will add anchovies 🤗 for the salt content. Mmmmmmmmmmmmmm
You make things so easy, I’m vegetarian and your recipes are incredible.
thanks a lot

Merci für die Info!!!
Merci beaucoup monsieur
my pleasure
It's in the oven right now. Will get back to you on how it tastes. :D Edit: It's good. Like you said a great light summery dish that is easy to make. Edit2: I made it again. Delicious.
I made this for dinner. Entire family loved it! :-) For my side dish I made homemade buttermilk mashed potatoes. Changes: I forgot the tomato sauce (no great loss I think). I also used herbes de Provence for my spices instead of Italian, and those herbs were mostly fresh from my garden along with my tomatoes. End of summer bounty. Thanks for the recipe!
Jill C happy to hear everyone loved it 😄😄👨🏻🍳
Yum
😀
YUM!
Je suis brésilien aussi, c'est un trés bon video!
Daniel Rubel merci Daniel I see more brésilien coming to the channel, I love Brazilian food :0)
Mmmm, bon appetít 😘👌
Wow, those tomatoes look sooooo attempting!!
Fusion Food Blog Cooking Video thanks for watching . Yeah tomatoes are great I love them. I see you have a nice channel too all the best with it and thanks for watching my video. Take care
Thanks! I found your channel through RUclips creator community. I love french cooking. It's great to learn something new here. :)
Fusion Food Blog Cooking Video geez I totally forgot I even had a profile on that site.
This looks stunning and tomatoes are almost ready here for picking here. I was wondering if you think it would be a good idea to toss the tomato slices in olive oil, the herbs, salt & pepper in a bowl (for even distribution) prior to assembling them on the crust?
Noor-Al-Deen P of course that's the beauty of it i am just showing one way of making it but the most important is to make the recipe yours but adding your own touch 😀😀
Reminds me of the delicious Dijon Tomato Tart! Some cheese some macaron....et some et some french cuisine...I had a small bottle of mustard de Dijon which was heavenly during Covid lockdown.yummmmmmm...
Lovely :)
Rika Ryu thanks for watching glad you like it
I feel like you could use that puff pastry as a vehicle for confit byaldi. Spread with a piperade instead of the tomato sauce and dijon, and top with salt, pepper, herbs de provence, and the requisite mountain of olive oil.
It does not sound as good in English....tomato & mustard tart. Lol! Sounds soooo much better when you say it!
It is really beautiful 😍 but chief don't take too long to upload a video ,we miss your cooking 👨🍳 😊
Candy Werewolf
Hi candy yes I know I would really like to spend more time doing videos but I still have to work full time at the moment. But yeah sorry about that I had my niece visiting from france and I am also working on a creating a new website where you guys will be able get involve with your recipes as well :0) but don't worry my plan is making more videos .. take care
First it is good to hear from you Chief 😊 second I can't wait for the website 😃 Thank you for your efforts, take care 😊
This looks FABULOUS!! I will be making this! :-D
Something different from a pizza and I'm sure much healthier too!
Dave Fromage
Hi Dave yes this is a really interesting recipe. And you can add cheese as well if you like :0)
Wow!! Thanks for the tip!! Now I have TWO recipes from one! I didn't think of that and that's WHY you are the CHEF...LOL! (and I LOVE cheese!)
Would you add the cheese under the tomatoes or on top of the tomatoes? What would be best in your opinion?
Oh, do you have a Twitter account for the channel, maybe I can post a photo when I make this! :-D
Thank you again...chef!
Dave. :-D
Dave Fromage well I think I will add it under the tomatoes to avoid it burning. And that will give you a nice cheese melt effect. You could also make it the way I did it and just serve it topped up with some marinated goat cheese or something that would work as well :0)
Dave Fromage
And yes talking about posting your version of the recipe. I am making website at the moment were you guys will be able to post your recipes with pictures and share them with everyone.
I watched another RUclips video and he put a small amount of grated Parmesan on top. If I ever get my hands on a couple of decent tomatoes I think I'll do half with Parmesan and half without.
I will definitely try this next summer when we are inundated with tomatoes from my neighbors garden. Commercially grown tomatoes in the US seem to have no flavor so I will file this recipe away until next year....never thought of using Dijon mustard on the crust, I'll bet it's delicious, can't wait until next year to try it! Do you sell the French Cooking Academy polo shirts? I see you wearing one in various videos but it's not on your Amazon page....
Radar DiMaria no yet this is something I am still working on . But it will be separate then amazon . Thanks for asking.
I sprinkled this with balsamic vinegar as well as the olive oil. It worked!
I finally made this today as a half size. I put too much salt and the tomato isn't crispy like the video. I think I should've sliced thinner than I did. I was scared to put longer than 35 mins cause the pastry might be burnt. I still have another roll of pastry and lots of tomatoes. I will try it again with less salt very soon!!
great to hear you keep on practising it 🙂🙂👍👨🏻🍳
Chef, Can we service this tart like the side dish with some main course ? And what is your main course suggest service with it ?
