Tomato Tart Get a Taste of Provence

    This recipe can be qualified as the ultimate summer recipe originating from the south of France. it is a surprisingly easy yet delicious recipe that can be made in small or large size. you could compare this as some of of pizza with its delicious tomato and herb base but the mustardy taste makes it totally different.
    In france people in the south make all kind of version of that same recipe to vary the flavors. I am giving you today the vegetarian version of this lovely recipe but the two main other things you can do it is to add anchovies or cheese on top of the tart.
    Ingredients:
    1 roll of good quality pre-made puff pastry
    2 tbsp Dijon mustard
    4 tbsp tomato sauce
    4 to 5 large tomatoes
    2 tsp salt
    1 tsp pepper
    5 tbsp olive oil
    1 tbsp herbes de Provence (or dried Italian herbs)
    5 tbsp bread crumbs

    This dish is to die for! I’ve made it several times and my boyfriend and I just love it. I recommend blotting the tomato slices with a paper towel to avoid excess juice or sogginess. Thanks so much for sharing your cooking talents with us!

    I made this, and it came out perfect. It tasted great and looked beautiful. I had a bit left over, and it reheated well the next morning. I dropped a couple of poached eggs and a sprinkle of smoked paprika on it and it made a great breakfast!

    My aunt always used to make this with the slight variation of adding gruyere (or emmenthal) slices in between the tomato and the mustard - delicious.

    After seeing the video I knew I had to try this. I made it yesterday and it was simply wonderful. And not too complicated for someone like me who is not a great chef. We ate the whole thing in one go - I wish I had saved some to reheat with some ham for example. Great recipe, and great cooking channel. Thank you!

      theres butter in the puff pastry, so it isny vegan unless you use a dough without butter instead of puff pastry

    I made a comment here before. I've made this tart now several times now,, and my family just loves it. I've made a couple of slight modifications in which you might be interested. I use honey Dijon mustard instead of regular Dijon. I found the tomatoes became too juicy after cooking them so now I slice them and let them drain slightly in a colander before I put them on the tart. I use panko bread crumbs instead of regular Italian crumbs. I sprinkle just a pinch of sugar over the tomatoes. I take about 1/2 dozen celigne mozzarella balls, slice and scatter them over the tart. Since I can make this I don't care if I never eat pizza again!

      Interesting changes. I love this recipe also. My wife, and especially mother love it. I love the panko idea. I dealt with the juicy tomato problem in 2 ways: more bread crumbs, and longer cooking time. I really never notice a doubling of bread crumbs as they're so neutral anyway. Also, I covered the outside crust with a loose foil ring to avoid too much browning and let it cook another 15 min. I make the outside crust smaller, so I can focus on reducing the non-foil covered tomato portion of liquid. I actually layer tomatoes even denser than chef Stephane did, but with good results.
      I would never had known about this recipe if it wasn't for chef Stephane.

    I made this for dinner. Entire family loved it! :-) For my side dish I made homemade buttermilk mashed potatoes. Changes: I forgot the tomato sauce (no great loss I think). I also used herbes de Provence for my spices instead of Italian, and those herbs were mostly fresh from my garden along with my tomatoes. End of summer bounty. Thanks for the recipe!

    This looks stunning and tomatoes are almost ready here for picking here. I was wondering if you think it would be a good idea to toss the tomato slices in olive oil, the herbs, salt & pepper in a bowl (for even distribution) prior to assembling them on the crust?

    I feel like you could use that puff pastry as a vehicle for confit byaldi. Spread with a piperade instead of the tomato sauce and dijon, and top with salt, pepper, herbs de provence, and the requisite mountain of olive oil.

      Dave Fromage well I think I will add it under the tomatoes to avoid it burning. And that will give you a nice cheese melt effect. You could also make it the way I did it and just serve it topped up with some marinated goat cheese or something that would work as well :0)

    I watched another RUclips video and he put a small amount of grated Parmesan on top. If I ever get my hands on a couple of decent tomatoes I think I'll do half with Parmesan and half without.

    I will definitely try this next summer when we are inundated with tomatoes from my neighbors garden. Commercially grown tomatoes in the US seem to have no flavor so I will file this recipe away until next year....never thought of using Dijon mustard on the crust, I'll bet it's delicious, can't wait until next year to try it! Do you sell the French Cooking Academy polo shirts? I see you wearing one in various videos but it's not on your Amazon page....

    I sprinkled this with balsamic vinegar as well as the olive oil. It worked!

    I finally made this today as a half size. I put too much salt and the tomato isn't crispy like the video. I think I should've sliced thinner than I did. I was scared to put longer than 35 mins cause the pastry might be burnt. I still have another roll of pastry and lots of tomatoes. I will try it again with less salt very soon!!
