    I litterally made this recipe for my parents tonight at dinner and I topped the tart with grated parmegiano reggiano and it was simply wonderful. The tomatoes were so tasty with a mix of sugar and salt, with the vinegar and the herbs : we did expect it to be good but we were not prepared for such intense and delicious flavors. It's a new favorite recipe in the family. Thank you so much for sharing.

    I made this using what I had at the time. A combination of white Italian vinegar and red wine vinegar, and a refrigerated pie crust. I followed the directions using what I had and OMG!! So delicious, I wonder what it would have tasted like if I had the sherry vinegar and puff pastry. I will definitely make this again after I get the ingredients I was missing. This is a pull out all the stops for company dish.😋

    This really tastes so great and it's easy and quick to make. I made it the 2nd time using frozen croissant dough since they were out of puff pastry and just unrolled them and formed on top. But those subtle sweet and sherry vinegar flavors, wow, this is such a hit, thanks!!

      Whole Foods has it, I've never actually used it for croissants, I use it for puff pastry recipes :)

    Looks great! What could I use instead of vinegar? One of my family members doesn't like it. Is there a chemical reaction that vinegar is necessary for?

      The vinegar isn't there to taste like vinegar. It's only there to make sure that there is a sour note to complement the sweet and savory elements of the tart. If you really aren't sure it'll fly with your family member, then you might try subbing it out for fresh lemon juice. Lemons go well with all the other components here and might serve you well. Good luck!

    Love this tomato tarte but my husband and our boys don't - hahaha, more for me! But I have to say, although I'm an experienced semi-pro cook, I needed to practice this a couple of times before I got the moisture balance to my liking.

    Oh that looks amazing. I have a whole bunch of heirloom tomatoes I need to use up and I was hoping this recipe might be my savior, but I don't even care because that recipe is worth learning no matter what. I(Tomato sandwiches, here I come)

    Looks delicious and not that hard to make. I don't have sherry vinegar and was wondering it balsamic would work or would red wine vinegar be better. I know balsamic is kind of rich and thick and the red wine is not as flavorful or rich as the sherry.

    This could benefit from a couple of(cut thin) lemons slices cut into small wedges. About 8 - 12 pcs each on top of the tomatoes then bake as per this recipe.

    Major props to ATC for not adopting that stupid slow motion technique for poring, chopping, toosing, stirring, etc. Kimball - you're an rube for having done so.

    For those who have arthritis, I personally found it best to remove skins & seeds of tomatoes. Same with peppers & potatoes - it'll help you soooo much, as it did me.
    Also try your best to not use NSAIDs & add MSM & glucosamine sulfate to your supplement routine & A,C E vits. I also added hyaluronic acid 125 mg from Lifetime vitamins.
    My diagnosis of degenerative arthritis was gone in 30 days. I had eliminated nightshades altogether, but later learned it was the skin & seeds causing problems -it's the plants' way of protecting itself from invaders!
    HTHS - HOPE THIS HELPS SOMEBODY!

    But Dan said all of the tomato flavor is in the jelly! You removed all of the jelly with the seeds! Is there a way to reincorporate that in the caramel or sauce to not lose it all?

      And trying to read the ingredients is either time consuming, difficult because of the scientific names that we've never heard of or seen or the print is either too small or distorted from the refrigeration.

      Whole Foods sells an all butter puff pastry. Brand is “Dufour Puff Pastry”. It’s not cheap! But if you watch videos of making it from scratch, you will be happy to pay!

      Maybe fresh lemon juice. The vinegar isn't there to taste like itself but to add a sour element. If vinegar really isn't your thing then try the lemon juice. It should behave similarly without needing to change the quantity. You'll just have a more lemony flavor as lemons aren't shy.
