    OK-we tried this...100% success, and 100% delicious. Thank you!
    We sweated some onions, and made a similar onion tart with the remaining puff pastry dough which was also quite good.

    This has been my mom's signature dish for decades :)
    I fully agree with you that no one can guess how so few ingredients can result in something as delicious. And, talking about little ingredients, Mom doesn't even use herbs nor cheese!
    This tarte is a true crowd pleaser. Even Uncle Pierre who hate anything that doesn't have pork in it will love it.

    My mom use to make it adding some anchovy filets. On top of the tomatoes and it is fantastic.

    Try Smart & Final in the freezer section and look for Jecky's Best inc. French Puff Pastry. 9 to a box and each sheet is 10"x15"

    I make a sweet tart, simular with puff pastry, but I top with firm pear slices, mascarpone cheese with a little lemon zest, a drizzle of honey and almond slices. Delicious and i love the texture.

    It's one of my mom's staple recipe and I confirm that it's really hard to believe how something that simple (and quite healthy) can be so good. She doesn't even put dry herbs nor cheeze. It's really the puff pastry/Mustard/tomatoes that do the magic. The only risk with that recipe is that, depending on the tomatoes, you can easily end up on the soggy side.

    300% delicious. I had an old pastry shell in the freezer that I was trying to get rid of spread with Trader Joe’s aïoli garlic mustard sauce fresh garden tomatoes fresh garden basil, Parmesan and it was exquisite. Wow. Wow!

    *add to food wishes playlist. Cook tomorrow. Those silicone baking sheets have been on my wish list for a month now. :) I want a really nice cutting board though as my next purchase. But $250-400 can take a while..

    I have a sheet of puff pastry in my freezer right now. I have a lovely volunteer pear tomato growing by my back door and lavender growing near my front door. Having been a chef at one time, I have most every herb and spice known to man, so mixing a little herbs de province should be pretty easy. But I think I'm going to use a little savory roasted garlic custard under my tomatoes instead of only Dijon mustard, sort of like one might use pastry cream for a fresh berry tart. Since I'm not a fan of parsley I'll switch it out for chives. Served room temp with a nice field green salad with honey-mustard vinaigrette that sounds like a summer meal that is right up my alley! And my birthday is on Wednesday! Oh boy! I don't even care if my other three human housemates like the idea! ;-P

    Holy Shorts! I just made this-with olive Tapenade instead of Dijon. Don't like Dijon. This is so good! It not only tastes good, but when you take it out of the oven people "Ooo". It is so easy-Thank you Chef John and puff pastry-and it looks so elegant. Iced tea isn't good enough. You must drink Rose' spritzers with lime/mint/elder flower sparkling water and a wedge of lime. Next time I will try pesto instead of the Tapenade,

    Ahh, those are some very handsome tomatoes! I am sitting down to a dinner of your spatchcock chicken, that I made with roasted purple petite potatoes, and some stirfry veggies, I made your peach cobbler, which is in the oven, that I made with Freestone peaches and nectarines. Soo good! If I can find some gorgeous tomatoes half is good as yours, that will be next for dinner. THANK YOU CHEF JOHN, I LOVE YOUR RECIPES...GOOD NIGHT!

    I love this recipe Chef John! Would it be easier to move the tart by cooking it on a baking sheet flipped upside down so there's no lip, thereby letting you slide it off to the cooling rack rather than picking it up with two spatulas?

    Wow....! A delicious recipe. I made two, and they didn't make it to the end of the day. I used a huge ripe beefsteak tomato, a few yello early girls and to fill up the gaps some cherrie and grape tomatoes. All fresh from my sun baked garden. Thank you very much for this recipe!

    I did this recipe a several times now and it is soooo delicious! Sometimes I put bits of anchovies in the little holes between the tomatoes. Ohh, so good. Thanks for sharing.

    I remember seeing tomato tarts on a cooking show about 15 years ago, and was blown away, that dijon + tomato + herbs combination was a game changer. I've been known to spread some mustard on my pizza dough before topping..

    Chef John,
    This is very close to the tomato tart I grew up on. My mum has done it for decades and the recipe has been fine tuned. When we lived in Marseille, you bet it had some nice tomatoes and herbs. But then we went on to live in French Guiana, of all places, and I'm glad to report that you can switch the dijon for a spicy mustard. Which in Cayenne they call "Moutarde Diablesse", "She-Devil Mustard if you will.
    This has brought back memory and I'll give it a shot.

      I've never had tomato sandwiches, but I used to eat tomatoes like peaches. Almost all tomatoes were so good back in the day, not the tasteless, mushy, or hard tomatoes that I found in the grocery store now.😵

    In Saudi Arabia, the tomatoes are in season January and February! They’re the best! I’m going to try to make this recipe with the spices that i have and hopefully it’ll taste good!

    First of, big fan. Often we'll try one out; usually with our own variations.
    Love tomatoes, so when my wife & I watched this we had to try it.
    It's an interesting combination of flavors. We make our own version of a seasoning mix, so we didn't use his specific mixture. After all is said and done though, I can't say we will make this again. We were both a bit disappointed. Instead, I'm going to try something similar using our home made ranch dressing instead of mustard. Think about it.

    Writing from France. We make this weekly in the summer with big ugly sweet tomatoes. Lumps of goat's cheese are a great addition.
