  • We talk about several recipes (see link below) and then turn several broccoli stems into a delicious broccoli coup concentrate. This with broth, milk, or cream to the desired consistency and enjoy!

    Pam's Broccoli Soup Concentrate
    5-6 cups broccoli pieces
    1 medium onion, chopped
    1 carrot, chopped
    2 cloves garlic, diced
    Salt and pepper to taste
    3 cups chicken broth
    Saute vegetables in a little olive oil until tender--add small amounts of water as necessary to keep from burning. Add broth, salt and pepper and boil for about ten minutes until veggies are very soft. Allow to cool for a few minutes. Blend in small batches to the desired consistency and store in the refrigerator. When ready to serve, thin with milk, cream, or broth as desired.. Garnish with grated cheese and broccoli florets.

    Dehydrate the stems, powder them, and then use the powder to make a single serving of shelf stable broccoli soup whenever you want it.

      I was thinking something similar to that. But I was thinking freezing a bunch of Broccoli stems till we could triple or quadruple this recipe & then freeze dry it! Then it didn’t matter what time of year it was …Instant Broccoli Soup!

      Interesting. I use them by peeling them, & first day's use slicing to add to fried rice. Second day, I chop florets finely & add to avgolemono soup.

      was thinking the same thing - dehydrate the soup. I have dehydrated the stems, turn in to powder then add to a "greens" jar. This mix of greens is added to dishes I cook up (soups, pancakes, smoothies, eggs, etc)

    I roast the sliced stems with chunks of potato, butternut squash and cherry tomatoes. I use olive oil and 1package of Italian dressing mix before roasting. When it comes out I frequently add cooked bacon. Yum.

    I freeze dried broccoli stems then powdered for use in soups, green smoothies and dips. Also when I make Overnight Floret salad I cut in small pieces the broccoli head and stem as part of the salad. I use the cauliflower stems the same way, no waste at all. Part of my “ make our food stretch and save” project.

    I cook the sliced up stems in olive oil, garlic and a couple if anchiovies and use it as a pasta sauce. Add grated cheese. Yum. Nothing goes to waste!

    I ferment broccoli stems with a clove of garlic. They are so crunchy and delicious that way, and super healthy.

      I have fermented so many other things. I have NO IDEA why I didn't think of Broccoli stems! Yum.... I'll have to try that...and of course add garlic! 😋 😋 😋

    You can peel artichoke stems and cook them, they are every bit as delicious as the artichoke heart. My sister and I both waited for mom to give us the cabbage core. We loved them. And I still eat them to this day.

    ARE YOU KIDDING ME? I just ate the most delicious broccoli soup in the entire world. Thank you, thank you, thank you. Carrots are in the dehydrator. Loaf of your bread coming out of the freezer. And people asked me if I’d be bored in retirement. And I only found you a couple weeks ago. LOL. My gal is so jelly she still has to work. Other than my prayer and scripture channels, your the best.     We love broccoli cheese soup, but we leave broccoli in small chunks.
    I have an immersion blender I bet would help cream the soup a bit.

    I actually prefer the stem over the florets because they don't get soft as fast and I like a little bite to my broccoli ... This looks like it would be delishous ... Another recipe I need to try ... I love your rainbow lentil soup with just a few additional ingredients ... Thank you for all you two do for the community.

    The spiralizer would be fun. We have its sister tool, the K.A. vegetables sheet tool. Makes great squash lasagna. I'll try it with a layer of broccoli 🥦 😋

    Looks delicious! I will definitely have to try that. I dice up broccoli stems similar to the size of diced celery and freeze them on a cookie sheet. I then store them in the freezer in freezer bags. I add them to vegetable soups and they cook up beautifully. I also do the same with my cauliflower stems.

    I steam the stems just a couple of minutes longer than the florets and they are perfect. I once heard Jacque Pepin say the stems are the best part.

    Usually I just peel and steam them and add to recipes like soup, casseroles or Stir frys. Learned a nice thing yesterday. When peeling potatoes use your paring knife and trim a little thickly. Then use then to fry or bake potato skins.

      If you shred them there’s often no need to peel them. Saves a step!

    OMG I'm so excited to try this recipe! I don't mind eating the stems... I steam or fry them, etc. But my husband doesn't and picks them out once he realizes I hid them in the dish 🤣. So this will give me a new opportunity to incorporate them into a new item. I will probably cut them up, and freeze them until I get enough to make this recipe.

    When asparagus is in season, I snap the spears and cook the tender parts, then peel the stalks and chop them and freeze them in a freezer bag and when I get enough over a few meals, I make cream of asparagus soup. Free food!!

    Some of our family likes the florets and some like the stems. No need for separate sides. Cooks stems first then add florets. Steam until done. Everyone spoons out what they like. I’m one that prefers the stems over florets.

    Great idea, I normally just toss them to my chickens. I imagine the mandolin would also be useful for the thin slices.

    Just did this today and had for lunch. It was great. I had saved some broccoli stems After watching this video, the first time, by wrapping them with aluminum full and wound up with about 8 cups. That was something I just found out recently that you can store things like cabbage, broccoli, celery in your refrigerator and they will last for weeks literally weeks if they are wrapped in aluminum foil tightly. I love your videos, just recently retired, and I have gone back through all three years and have been watching them. You are one, smart lady!

    I love broccoli soup. Do you think we could can this soup (without the milk, cream or cheese of course - add that later like the tomato bisque soup). I would love to have this canned on my shelves! Great video. Thanks for all you both do!

    When I realized I had to start eating organic to not have headaches anymore, after fifty years of chronic headaches and I really don't have them anymore BTW. I realized with the price I pay for USDA organic vegetable but I was going to eat the entire vegetable oh, and I do. For example a bell pepper just the very thin layer of what on the surface of the stem everything else gets eaten. And yes, those broccoli stems, I've had to learn sometimes peel off the outer thick layer, but yep, it gets eaten. Great for vegetable stews and stir-fried veggies 😋

    That turned out beautifully! I love Broccoli Cheese Soup but prefer it chunky. I add diced carrots, onion and celery, along with peeled and diced broccoli stems. Cook until soft. then add a mixture of Velveeta, cream cheese, and half & half. Thin with chicken or vegetable broth if desired (I like mine on the thick side). Heat until cheese has melted, then add the broccoli florets, chopped small. Continue to simmer until the florets are tender. Thank you for sharing your recipes with us. Y'all make such a great team!

    I peel the outside of the stems with a peeler, then slice and sauté. So good! This soup looks good also.

    I really love this idea. I just did an Internet search and puréed broccoli soup came up. Well there are tons of ideas to take that base you made and turn it into the Internet ideas I just found!
    I do make grated broccoli and add it to my existing slaw. Another thing I use is the core of the pineapple for sweetness. They said that there is so much nutrition packed in the pineapple core.

      I like both. "Little trees" and the stems are both delicious. My grandma always used the stems in casseroles & especially soup. She just cut them up smaller to make them cook tender. They taste the same, but I like the way they feel.

    I use the stalks for stir-fries or just steam and serve with other cooked veggies. You could also freeze dry and add to soups or stews.

    We eat the whole plant. Home grown stems are more tender than store bought. The leaves are excellent sautéed. Probably my favorite greens!

    Thank you so much for making this video! I now have a new use for my broccoli stems. Growing up in a small coastal town, my Asian friends would trim off the rough edges of the broccoli stems and chop the stems up into small thin cubes to cook in their stir fried dishes. I never thought to use the stems to make soup. 🤯🙂❤

    Great recipe! This would be something I could prep ahead and have in fridge for weekend company. I always stress over the food! I don't want to spend all my time in the kitchen rather than with my guests and this will be just like fresh eating and EASY!

    I don' throw broccoli stems away. They are my favorite part! If I am making broccoli salad where I need 4 or 5 heads, so lots of stems, I just chop into 1ish inch pieces and add to the salad. Thank you so much for posts! I enjoy your channel.

    I’m currently grinding up broccoli and the stems for broccoli cheese soup. I have been planning all day to make soup so it’s kinda cool that we are both making our own variation of broccoli cheese soup.

    The stems are my favourite part. I slice them in half inch chunks and use them in stir fries and breakfast omelettes and lunchtime frittata.

    A really excellent way to use these nutritious “throw away” pieces. My spouse isn’t the fan of puréed soups that I am, so we have a bowl of soup with one meal and then I use it as pasta sauce. It’s really delicious on a packet of refrigerator aisle ravioli for a quick weeknight meal.
