  • Red Wine Red Velvet with Red Carpet Top for Valentine’s Day - I love this red velvet recipe. It is the ordinary red velvet recipe but adding some red wine to it. Someone suggested this, and I thought it’s a brilliant idea. It may not be very wine test. For more taste, perhaps you can brush more red wine to the cake instead of sugar syrup. Overall the texture of the cake is so soft. I’ve also included the egg replacement below, and to my experience, it’s wouldn’t be far off from the egg version. The red carpet top is so adorable too.     Ingredients:
    Pan size: 7x7 inch heart shape and 3 inch height ☺️
    • RED WINE RED VELVET CAKE
    90g [⅓ cup + 1 tbsp] unsalted butter, softened
    80g [⅓ cup] red wine***
    60g [¼ cup] whole milk
    15g [1 tbsp] white vinegar
    240g [2 cups] cake flour
    15g [2 tbsp] cocoa powder
    ¾ tsp baking soda
    ¾ tsp baking powder
    ½ tsp salt
    150g [¾ cup] caster sugar
    2 large eggs ***
    120g [½ cup] oil
    1 tsp vanilla extract
    15-20 drops of red food colouring (depending on the redness you desire)
    ***RED WINE REPLACEMENT: 80g [⅓ cup] whole milk (you'll need the other milk stated in the recipe as well. So total whole milk is 140g)
    ***EGG REPLACEMENT: 120g [½ cup] plain yogurt
    • CREAM CHEESE FROSTING
    226g [1 cup] cream cheese, softened
    40g [⅓ cup] powdered sugar
    360g [1½ cup] whipping cream
    syrup [1 tbsp sugar + 2 tbsp hot water]
    Instructions:
    • RED WINE RED VELVET CAKE
    1. Preheat oven at 175°C/348°F.
    2. Slice the butter and place into a bowl. Set aside until it is softened.
    3. Sift all the dry ingredients: flour, cocoa powder, baking powder, baking soda and salt. Give it a quick mix and set aside.
    4. Once softened, add sugar to the butter. With an electric mixer, mix on high speed for 2 minutes until creamy, pale and fluffy.
    5. Add in the eggs, one at a time. Mix on medium speed until well combined, before adding another egg.
    6. Add in the oil, continue mixing until well combined.
    7. Add in the milk and vanilla extract. Mix until well combined.
    8. Add in the sifted dry ingredients in 2 batches.
    9. Add in the wine in 2 batches, alternate with the sifted dry ingredients.
    10. Use a spatula to fold in the remaining dry ingredients and wine so that you do not over mix the batter.
    11. Add in about 15-20 drops of red food gel colourings. Fold until the colours are even in the batter.
    12. Bake in preheated oven at 175°C/348°F for about 45-50 min or until the inserted skewer comes out clean.
    13. Remove the cake from the pan as soon as right out from the oven. Let the cake cool completely.
    14. Slice the cake into 3 sheets.
    • CREAM CHEESE FROSTING
    1. Add the cream cheese into a large mixing bowl. Let it sit until softened or room temp.
    2. Add in the powdered sugar.
    3. Mix on high speed for couple minutes until well combined.
    4. Gradually add in the whipping cream in a few batches. Mix on medium speed until stiff peaks are formed.
    5. Transfer into a piping bag and start assemble the cake.
