Red Velvet Cake Roll - Christmas Yule Log
For 1 Buche de Noel cake
Ingredients
Genoise Sponge Cake (12x16 inch):
4 eggs
3/4 cup granulated sugar (150g)
A pinch of salt
1/2 cup all-purpose flour (63g)
3 tablespoons unsweetened cocoa powder (20g)
Red food color
Whipped Cream Filling:
1 cup whipping cream (240ml)
3 tablespoons granulated sugar (35g)
1 teaspoon pure vanilla extract (5ml)
Buttercream Frosting:
½ cup unsalted butter, softened (113g)
1 1/3 cups confectioners’ sugar (165g)
1 teaspoon pure vanilla extract (5ml)
1-2 tablespoons cream, to adjust the thickness (15-30ml)
Fondant Deco:
Red fondant
Green fondant
Directions
1. In a heat-proof bowl, mix in eggs, sugar, and salt. And place the ball over warm water (not boiling water), whip until thick. And whisk in red food color.
2. Out of heat, sift in flour and carefully fold not to break the foam. Then sift in cocoa powder and fold until combined.
3. Spread the batter on the parchment paper lined jelly roll pan. Bake at 390 degrees F. for about 9 minutes.
4. Out of oven transfer to a wire rack. Cover the cake with towel and place a rack over the towel and turn upside down. And remove the parchment paper.
5. Roll the cake with towel and let cool.
6. Whip whipping cream, sugar, and vanilla until stiff.
7. Spread whipped cream over the cooled sponge cake. And roll up. Cut off the ends and make the log shape you want.
8. Buttercream frosting: In a bowl, mix softened unsalted butter, confectioners' sugar, vanilla until smooth. Adjust thickness with additional cream.
9. Spead buttercream frosting. And decorate the cake with fondant or meringues.

설탕 150g
중력분 63g
소금 약간
100% 코코아 파우더 20g
레드 식용 색소
생크림 필링:
휘핑크림 240ml
설탕 35g
바닐라 5ml
버터크림 프로스팅:
무염버터 (상온에서 부드러워진) 113g
파우더 슈거 165g
바닐라 5ml
휘핑크림 15-30ml (농도조절용)
퐁덩 데코:
레드 & 그린 퐁덩

Una pizca de sal
63g harina para todo uso
20g cacao en polvo
Los alimentos de color rojo
Batida relleno de crema:
240ml crema de leche
35g azúcar
5ml extracto de vainilla puro
Buttercream Frosting:
113g mantequilla sin sal, ablandada
165g azúcar en polvo
5ml extracto de vainilla puro
15-30ml crema, para ajustar el grosor
Deco base:
Fondant rojo
Fondant verde

Pour une Buche de Noel gâteau
ingrédients
Génoise Génoise (12x16 pouces):
4 œufs
150g de sucre en poudre
Pincée de sel
63g de farine tout usage
20g de poudre de cacao
Les aliments rouges
Fouettée garniture à la crème:
Crème 240ml
35g de sucre en poudre
5 ml d'extrait de vanille pure
Glaçage au beurre:
113g de beurre non salé, ramolli
165g de sucre glace
5 ml d'extrait de vanille pure
15-30ml crème pour ajuster l'épaisseur
Basé Déco:
Fondant rouge
Fondant vert

Looks soooo yummyy!! Just a question, i can replace the whipped cream filling with cream cheese frosting? Since creamcheese and red velvet goes well tgetherr ^_^
My grandma usually makes a similar cake every christmas, but with chocolate filling and frosting. This should be a great alternative, looks so good and must be so yummy!!!

Triz L I love this cake, it's really delicious. It can be made the day before you eat but the ends of the cake should be also covered with frosting, otherwise the ends of the log cake will get dry. And it should be refrigerated. Good luck!

Hi, My Le. 1 large egg without shell should be somewhere between 50g and 60g. So in total it should be 200-240g. Hopefully this helps. :)

김예은 머핀틀이면 깊이가 있어서 보통 180도에서 15-20분이예요. 봐서 시간 조절하시고 생크림과 먹으면 정말 맛있어요. ^^
