    In Venezuela, we use Venezuelan corn meal which is already cooked corn plus pineapple peels which serve as an enzyme provider to turn the corn meal into sugar... then we let it ferment with airborne yeast. It's that simple.

    Hello i made this beer 3 weeks ago and bottled it in big bottle 1 litter bottle and today i opened it and tasted amazing but the problem is that i couldn't finish it all so i want to ask if i can keep it closed after i opened it in the fridge and how long can it stay before go bad?

    What temperature do you brew at? Did you boil? Or just steep?

      My room temperature here was 30*C degrees

      Because the original one is without hops. For my taste it's between a beer and a wine.

    If the percentage is lower, what would you advise me to do??

      Hello my friend, I have used yeast from apples, but it does not always work as intended. I am not sure about ginger bug. Try to get packets of yeast such as Red Star.

      1 teaspoon from the bottom or 1 tablespoon from the juice

      @@waliddabbech7925 there is no need for that. he has already added yeast to the wort (ginger bug is a type of yeast). when he puts some sugar in the bottle and closes it, the yeast left over in the drink will ferment the sugar and produce carbonation.

    I made it your way at first, but found out that with a little change, this can be made better and cheaper. Less sugar, 60g per liter is enough for a 5% ABV. As for roasting, do whole batch at 60 C for 60 minutes and half the batch at 85C for 30 minutes. Place whole batch between 2 cloths and crush with rollerpin to expose kernels. Happy brewing!

      @@Spectacular-cuoredicioccolato i am really afraid of Methyle alcohol. If its produce into the ethyl alcohol then its gonna become very poisonous to drink. How do i know that there ia no Methyle alcohol?

      The problem is the concentration of it , the alcohol in this beer will be the same of any other beer

      Hi, this is yeast left from a previous beer fermentation, as yeast is a microorganism you can capture some and reuse it for other fermentations. Instead of adding this you should get a sachet of brewing yeast and put it into some tepid water for fifteen minutes before adding it to the fermenter.

    Isn't it better to pulverize/blend or break the corn so that the contact area between the starches, enzymes and yeast is bigger, therefore requiring less added sugar?

    hello , this beer is working with Saccharomyces cerevisiae baker's yeast? I think is no problem, because the name of the Ale beer yeast is same Saccharomyces cerevisiae.
