I would prefer to use the stand mixer as it incorporates all the ingredients fast ..and in gumpaste that is what is needed..if you use hand then the recipe needs change accordingly as the water content you would need more
No margering is only 70% fat shortening is 100% fat we use shortening because the paste will not melt in humid conditions..if you use margerine then your flowers will start wilting

Its OK if you have added bit more water to combine ..icing sugar varies from place to place because of the cornflour ratio in different countries.. The point here it should all combine together as a ball and not soggy

Hi the right consistency is after you add the extra icing sugar it becomes hard is the correct texture..(gumpaste should be hard) when you want to use it take a little and add bit of shortening in your hands and condition the paste it will become easy to work with..

Icing sugar should be used..no shortening gives you the flexibility so it can help yu to stretch the paste more thin..
