    She passed in Nov, 2022.

    Nicholas Lodge was my favorite teacher. No, I mean my favorite teacher of any subject or any school or class I have ever had the fortune to have had in my entire life and I am old. I have just read that he passed away on August 9, 2022 and I am devastated. I first met him in 2004 and have enjoyed sugar flower making ever since. Sugar flowers are very meditative to make for me and part of the reason why I have found my meditation in flower making is due to Chef Nicholas Lodge.. Rest in Peace, Chef

      @@NicholasLodgeschool my gumpaste came out as a Rubber ball. Were did I go wrong? To much Tylo? I followd the recipe exactly. So sad that mine got ruined. Tnx in advance for answering 🤗

      @@jennyfrostelid76 Sorry you had a problem Jenny. This is the recipe I have been using for over 25 years. The recipe is formulated for use with Tylose C Composition 1000, as outlined in the video. Perhaps the Tylose you were using was not this type. If so, next time cut back on the amount of Tylose when making the gumpaste. You can always add more later if the gumpaste is too soft. If the gumpaste you have can be kneaded, try kneading in some additional egg white and shortening. This will help. So far I have never encountered a batch of Tylose gumpaste that could not be salvaged this way. I hope this helps. Thanks for watching and Happy Flower Making!

    Thank you chef for the great tutorial and explaination.. if i find thw gumpaste is drying too fast, should i reduce the amount of tylose powder? Do you have any advice?

      There is not one perfect gumpaste recipe that will do everything for everyone. This is the method and gumpaste that Chef Nicholas used for over 25 years in his classes around the globe. If you find the paste is drying too fast for your working style you may try less Tylose or perhaps just a little more additional white vegetable fat/shortening/Crisco as you do when conditioning each piece of gumpaste prior to rolling it out and cutting out flower petals and leaves...Watch some of the other Chef Nicholas Lodge RUclips videos on making gumpaste flowers and you will understand what is being referenced here, as you work/condition each piece of gumpaste...Thank you for watching and Happy Flower Making to you!

    Is your cmc modelling paste more flexible than ordinary flower paste as I can't get hold of sugarin anywhere?

    I’d like to make gumpaste flowers but they won’t be eaten. Would I use something other than the egg whites? If I use egg whites will my gumpaste eventually spoil? Excellent tutorial. My cake decorating instructor recommended your videos.

Tylose based gumpaste will dry under humid conditions and will not soften when exposed to reasonable humidity.       Please visit the Chef Nicholas Lodge website at www.nicholaslodge.com and click on Recipes & Templates and see the heading Making Tylose Gumpaste for the full written recipe with hints, tips and more information...It is not recommended to make a smaller batch of gumpaste than suggested by Chef Nicholas and the proportions do not translate to smaller batches. Make a fuyll batch and place any additional gumpaste into two zip-top bags and place into the freezer for long term storage. Allow the gumpaste to fully thaw at room temperature while still in the two zip-top bags. If you open the bags while the gumpaste is still frozen, condensation will form on the gumpaste making it excessively sticky...Thank for watching!

      Gumpaste is used to create flowers and rolled fondant is used to cover cakes and-or create decorations that can be applied directly to the top or sides of the cake. Rolled fondant cannot be rolled out thin enough to create "realistic" flowers. Also, rolled fondant will not dry firm enough to make decoration that need to stand up like letters or flowers.       This gumpaste may by colored using cake gel colors. Add the gel to the gumpaste just like you would add it to rolled fondant or buttercream. If you add too much, the gumpaste may become sticky.       The recipe I have developed as shown in the video is formulated for Tylose C Composition 1000. There are over 200 variations of Tylose powder and CMC. If using someting different than Tylose C, Compisition 1000, you would need to conduct a test to see if you are please with the results...Thanks fo watching!

I do want to ask however, if you used more powered sugar when making the colored batch, compared to the regular white batch?? I’m wondering if adding the color made the paste more sticky or wet so there might be a need for more sugar??? Thank you...

      When a recipe has this much sugar, the recipe will never be exact, cut to the weather conditions where you are, brand of sugar and other outside influences. When making a batch of colored gumpaste, add enough powdered sugar to reach the consistency you desire. Remember, the gumpaste will become more firm after it rests for for awhile.

      The temperaure will have not affect on the gumpaste. When making a dark color the 25g to 27g of Tylose will be enough. If the gumpaste is a bit sticky when using it, use a bit of cornstarch or cornflour on your fingers, cutters, etc. to prevent sticking...Thanks for watching...Chef Nicholas

      Tylose based gumpaste is vaey stable in humid weather. However, you should never place gumpaste items into a refrigerator. This cold, wet environment will cause all gumpaste to melt, unless you have a special "no-humidity" comericial refrigerator. Happy decorating to you...

      Any recipe with this amount of sugar in it, and when egg white sizes can vary from store to store and from country to country...an EXACT recipe is not possible. This gumpaste recipe can always be saved. If to dry add a little more egg white and white vegetable fat (shortening/Crisco) and knead it in, wrap the gumpaste well and wait a bout an hour. It too wet, just add additional powdered sugar...This recipe is very flexible. Happy flower making and Happy New Year to you. Thank you for watching!

    How long will the flowers last once they’re made? I like to make several extra flowers to keep on hand in case I need them in a hurry to use on a cake.

      If stored properly Tylose based gumpaste flowers will last for years. Once made store in a container, it does not need to be air-tight, wrapped softly in tissue paper and place the box in a dark place as free from humidity as possible. Humidity, dampness and dust are gumpaste flowers worst friends. Do not store in a damp basement or in a cabinet in the humid kitchen. If the gumpaste flowers have been colored, it will be important to keep them away from light sorces to prevent the colors from fading...Hope this information is helpful...Happy flower making!

    Thanks for the recipe... what is the brand of tylose that you have used?

      The Tylose that I use is packaged by Confectionary Arts International. There are over 200 different types of Tylose. Tylose is used from everything from ice cream and toothpaste to cleaning automobile engine blocks. Not all types of Tylose are edible. When choosing a Tylose powder ensure it is "Tylose C/Composition 1000" so your gumpaste will have the same qualities as the one demonstrated in the video. Thank you and Happy Decorating!

    Just followed recipe and used 30g CMC /tylose and it’s gone really stiff and added extra icing sugar and trex kneaded and it’s gone awful lol, really gone like elastic/ chewing gum? Please help me Nicolas your my only hope 🙏🙏🙏 any advice to rescue my gum paste please and Thank you in advance

      You can alwasy save a batch of Tylose based gumpaste, as long as your started with food grade Tylose. Take 85g of your prepare gumpaste and add 15g of white sugar paste and knead together and leave for several hours or overnight. This should correct your problem...Next time cut back on the amount of CMC/Tylose you use. There are several different brands of Tylose now on the market and some are stronger than others. The Nicholas Lodge Gumpaste Recipe was formulated for "Tylose C Composition 1000." If it does not state this on the Tylose container label, it is probably a stronger version.       Water will not provide enought strength for putting together gumpaste flowers. Egg white is the best to use, but if you are totally opposed to using eg white make a glue by using water and gum arabic...Happy flower making to you and thanks for watching!

      Hello. It is not a wise decision to cover a cake of a cake dummy with gumpaste. Gumpaste is too brittle and has no flavor. Cakes should be covered with rolled fondant or sometimes called sugar paste. This sugar dough is formulated for covering cakes and is easy to roll out and has a much better flavor and may also be flavored as well...Happy decorating!

      The video you were watching was for making gumpaste also know as petal paste. This is used for creating edible flowers and decorations for cakes, cookies, cupcakes, etc. This paste dries very hard and brittle and is nt intended to be used as a covering for a cake.
      When covering cakes you use rolled fondant or sugar paste. Rolled fondant does not dry hard and has a more pleasant taste when eating. There are many videos on RUclips for making and using rolled fondant. The brand I use and suggest is Renshaw and is available from Deco Pack. www.decopack.com

      Modified gumpaste is a mixture of both gumpaste and rolled fondant. Usually it is a 50/50 mixture of half gumpaste and half rolled fondant. For example, if you needed 8 ounces of modified gumpaste combine 4 ounces of gumpaste with 4 ounces of rolled fondant, kneading them together until combined.

      I don't fully understand your question. But is you are asking is this is a non-melting gumpaste, then the answer is no. This gumpaste is sugar based and will adsorb moisture and humidity and any items made from gumpaste should be kept in as humid free environment as possible. Hope this help! Thanks for watching!

      @@fiyaa9357 I'm not certain what you mean by non-melting? No-melting due to heat, humidity, long term storage? This gumpaste recipe hold up very well to normal weather heat and weather related humidity. There is not a gumpaste that I know of that can be placed into a moist, humid refrigerator/freezer and hold the flower shapes.
