Roasted Spatchcock Chicken

- This has to be one of the best Roasted Chickens that I have ever cooked. It is so simple. Remove the backbone, flatten, put on a sheet pan, heat oven to 400 degrees, season chicken with salt and pepper. Don't be afraid to season well. Slide some rosemary underneath, slice lemon, squeeze some on top of the chicken, and lay the remaining slices around the chicken. Bake 1 hour to 1 hour and 20 minutes until chicken reaches internal temperature of 165 degrees. There is no recipe, only instructions. This is a delicious chicken. Use any leftovers, if you have any, to make a chicken salad, or a chicken sandwich.

You can grill some lemons on the grill pan you used. I often forget but Bobby Flay does it and so good & juicy

Im gonna try this chicken but im definitely going to season it with different seasonings my mawmaw and auntie uses just salt and pepper like its seasonings and it just makes the food so bland no taste at all so my mama taught me to use seasonings on all my meats and im so glad she showed me seasonings and marinades growing up snd my daddy too my mama of course makes amazing southern soul food omg and i learned from her and my daddy how to cook ...theres so many of your recipes i cant wait to make ..i just found your channel tonight and I've already watched about 25 videos lol ....i love it you are such a sweet woman so much like my mother inlaw its so awesome my mother in law is amazing...
Love making chicken this way, let me add, kitchen shears would make spliting the chicken much easier, I put it in a cast iron skillet with potatoe and lemon slices, lay the chicken on top, oh my how delicious

Hi Karen. You sound like me when cooking--I get excited when I'm cooking something that I know is going to turn out to be real good. I enjoy watching you cook. I've never spatchcocked a chicken. I think it's time! I was so glad to see you grilling the romaine, and I loved the smile on Pop Jones' face when you were going over what you fixed for dinner. I fell in love with grilled romaine a number of years ago when I had a grilled Caesar salad (yes, with anchovies, please) served with a mushroom risotto. Delicious. Made me hungry Karen look like a real good supper .I wish I could still find brown & serve rolls but I love the Rhodes rolls too I will have to try the lettuce made that way I bet delicious .Going to try and fix the chicken that way .I remember mom would always cut a whole chicken she always said a small chicken had the best flavor she would put it in salt water before cooking it . ❤️

Spatchcock chicken is the best!! I've even spatchcocked an 18 lb turkey and every bit of it was moist and delicious.
I bet it cooked a lot quicker than baking. ❤️😋
@@KarenJonesFoodFamily yes, it only cooked 90 minutes .. I couldn't believe it! Rested for 30 minutes, 165 degrees, and my tummy was fixin' to be happy!

It is really delicious. Just wilted a bit. I usually only eat with salt and pepper. With the slight charr I don't want a dressing. Although, salad dressing would be great on it. ❤️❤️❤️

Everything looks Delicious 😋. I save the backbones to make chicken stock. I season the back side, yes I oil my chicken both sides.i use the lemon pepper seasoning. I put lemon slices on the bottom..I admit taking the chicken out and putting butter on the front.i cut my potatoes in half. Those juices soak into those potatoes. and yum.i have to do about 4 to 6 of those chickens at a time. Dinner, supper is a big deal. My husband work hard so I make sure our last meal is filling. Yours look great. I let my chicken rest for 15 minutes. It's the last thing I plate😊. Yours look great. I'm sure it was Delicious. Having a variety give family a choice. I like how you did the romaine, had deviled eggs. Your meal would have pleased a whole family. Karen have you thought of putting a little grilled pineapple on your pear salad.😊 Doing a chicken that way cuts down on the amount of time you have to roast it. I love these kinds of meals, like one pot meals. Easy, and less time-consuming. I have never put pineapple on the pear salad. Admittedly, I don't like it, but the family does. Thanks 😊 😋❤️😋❤️

I’ve often wanted to try the sautéed romance lettuce, heard it was delicious. I know the French cook their lettuce. They do a recipe with cooked little gem lettuce and peas, but I believe they use petit pois.
Anyway, your chicken recipe looks good, will try it next Sunday when I’m off.

I am a supervisor for PENSKE Truck Leasing Paint and Body Shops. We repair the trucks from north Alabama to Mississippi and along the coast to the northern panhandle of Florida.
I've found that it's cheaper and safer to just buy chicken parts separately to roast than to bother with a whole chicken.
Whole chicken is ridiculous expensive.
You can buy leg quarters and breasts, divide the package, have several meals and guess what, no backbone to remove and possibly get cut doing it
If that's what you like, do it. That's the beauty of cooking. I often roast chicken leg quarters. ❤️❤️
