I'm of Italian descent (my ancestors came from Sicily, Calabria, and Naples). My favorite part about Christmas is the Struffoli..I always look forward to it every year. When I make it, it reminds me of my grandma

To save time I lined up the rolled lengths of dough and used a pizza cutter then picked them apart and rolled into balls and placed in oil, ten in and ten aside then repeat. I started this from the way I make my meatballs. Great recipe so good.

Hey Laura: I have a tip to help cut down the prep time. We run the dough through the small attachment of the sausage stuffer that goes with the Kitchen Aid Stand Mixer. Helps a lot to cut down the rolling time and keeps things the same size. Hope you try this.
I had those when I was invited to a traditional Italian dinner when I moved to Italy : ) Everything was homemade and delicious but not gonna lie, dessert was my favorite part of that dinner : )

Christine, I just made those with my 98 year old aunt. She calls them "waffle cookies." Same dough as struffoli (without the citrus zests). Roll to about 1/8 inch thick. Cut in 1/2 to 3/4/ inch wide strips with crinkle roller cutter. Form a small circle using egg white for glue. Continue looping and gluing to form shape. Can be flower, back and forth like ribbon candy or pretzel shaped. They come out all different sizes depending on length of dough strip). Fry in deep fryer until golden. Coat the top tops with powdered sugar. (My grandmother made up her own icing with powdered sugar, brown sugar, melted butter, vanilla, orange and lemon flavorings and enough milk to thin. Brush on or dip then put on sprinkles.)

Struffoli are a traditional chirstmas dish from south italy, I'm from naples; here, grandmas and aunties are usually involved in a "struffoli war" disputing for the title of struffoli master. My grandma's not that good at it, her struffoli are just as hard as bullets D:
My mom made these by the thousands at Christmas time as kids. Christmas gifts for our teachers x 8 kids. My moms mom and her mom are from Naples too! When she baked the kitchen looked like a bomb went off. By the time everything was cleaned up (well past midnight) most of the Stuffoli were eaten!!I'm going to make your recipe for my mom this Christmas. My wife and I made these and the peppermint bark for a Christmas party last night. The bark turned out great and everyone loved it, these not so much. We must have done something wrong even though we followed the recipe to the "T".
My mother shaped hers in a pointy mound like a Christmas tree. She also used the same elongated, soft sprinkles as you. We called them jimmies. She never used citrus in her dough, only vanilla and almond extract. Also her sauce was honey with a bit of sugar and water added. This was boiled for a few minutes before coating the balls. The differences must be regional. My Mom was half Tuscan and half Sicilian.
