Just made this last night. My aunts make this cookie in Italy when we visit and wanted to recreate. This is extremely close to the authentic ones my aunts would make but I’d say it’s even better. The flavors are incredible. The texture of the cookie is phenomenal. Added this to my new flavor cookies to make every Christmas. Thank you for the recipe!!!

My mom made these for my Christmas Around the World in the 3rd grade. I’ve always thought of them as the Italian version of fig newtons. I’m going to have to make these soon!
My part of Sicily calls them cuddureddi. My mom makes them every Christmas using the figs from our backyard. Everyone loves them. My mom prepares the filling a couple days in advance so the flavors are more intense. Buon Natale, Laura e famiglia!

But that's a good question about what the difference is between a cookie and a pastry. After all, rainbow cookies are technically cake not a cookie. I thought pastries were cakes, pies, doughnuts, soft things like that, possibly filled with cream. Cookies are usually small and crispy. Whatever they are, they're all delicious!

I have a question. I use fresh figs because I have a fig tree but ALL the recipes call for dried. So my fresh figs have so much moisture it is too runny. How can I thicken it up? FYI the recipe I use just blends the fig mixture and doesn't actually cook it. Could I cook some moisture out?

Reminder: Figs with seeds are pollinated by female fig wasps and then decomposed by the fig, so if you’re stingy about having the remains of a dead wasp in your figs, check the source of your figs and make sure it’s seedless as those figs do not require pollination. Hope this helps :)
This is easier if you just pipe the filling and roll the cookie and cut the dough as your making each round , rather then cut it in 1/2 and cut them down to the size u want

You could probably just use all butter. Or something like lard.
Sure half lard half butter is good too for many other pastries and doughs.
