Procuro não deixar a massa muito branca (necessário controle da glicemia) para 8 xícaras de trigo coloco 1 xícara do integral mas nao fica macio. Tem alguma sugestão?

Die Wickeltechnik ist gut. Der Teig aber wohl nicht ganz ausgeknetet und entwickelt. Die Oberfläche reißt immer wieder. Im letzten Step auch etwas überdehnt, da reißt's schon wieder. Zieht man die Oberfläche etwas durch Mehl wird sie schön glatt.
Siehe Introbild, da ist der Einschnitt auch im 45 Grad Winkel geführt. Trotzdem die Wickeltechnik gibt hier einen schönen Ofentrieb. Geht man ewtas schonender mit dem Teig um, wird die Krume offenporiger - wenn man das möchte 😉.
Alles in allem gute denke auch gelingsichere Anleitung. Hab ne gute Inspiration bekommen. Danke ❤
