I followed your recipe, substituting the cottage cheese with equal amounts of ricotta, as that’s what I had. Also cooked on low for 8 minutes, with the 5 minute natural release. It was excellent! It was fluffier than on high, but still fully cooked!
I just made these on high & then another batch on low. The ones steamed on low developed a little less of a rubbery skin on the outside and had a more consistent fluffy texture throughout. Both tasted great, though!
I cook on the “Steam” setting for 10 minutes & then natural pressure release for 10 more minutes. If you don’t have the “Steam” setting, “Pressure Cook” may work just as well, but I haven’t tested that myself. Good luck!
Good morning Heather just watched both of the egg bite videos. I will be ordering the silicone molds off of Amazon today and giving them a try as soon as they get here.
I found they came out rubbery at 8 minutes. I cook for five minutes on high and natural release for five. Next time I will try low pressure which is actually steam cooking.
I have made these with varying times between 7, 8 or 9 minutes.I'm not sure if I should be using the steam function or the pressure cooker function, and the only reason I say this is because there are some Costco brand egg bites from three bridges. And they really have the consistency the closest to the Starbucks bites they're very silky and custody. I find that I'm not able to get that consistency in my instant pot. Which is disappointing I'm sure it should be able to I just find that my egg bites are a little chewier. Maybe that's the benefit of doing a slower pressure I'm not sure. Do you find that your texture is similar to the silky custard texture of the Starbucks?
I bet you can only get that texture with the sous vide method, but idk. For me, the sous vide method is too much of a pain bec you have to use glass canning jars and it takes longer. I’m fine with the IP bites.
If you look at the Starbucks ingredients, the number one ingredient is cottage cheese. Second ingredient is eggs. Which legally means that there is more cottage cheese than eggs in the Starbucks version. I think the sous vide method is probably the main reason for the custardy texture. But it could be that the ratio of cottage cheese should be really increased. Maybe that might give a better texture. In addition to increased cottage cheese, the Starbucks ingredient list contains butter further down. Perhaps adding a little butter might help too.
Susie I tried 50% egg 50% cottage cheese like another video recommends, but ultimately didn’t like it as much. I think the texture was closer to the sous vide method, but I just didn’t like the taste
Try using a splash of heavy cream in your egg mix that's the secret for the texture in egg bites and scrambled eggs.It doesn't take much and is very neutral as far as flavor if you don't use enough the bites wont be as creamy to much and they'll come out a little bland tasting

Great question! I put a couple of them on a plate, cover with a damp paper towel and mircroave on reheat for 45 seconds. Be sure to use the reheat (and not just regular cook) function on your microwave. You only want to reheat and not cook them anymore. Depending on the power of your mircrowave you may need slightly less or slightly more time! If you don't have a reheat button, then heat it on 50% power instead.
Loved your egg/cheese ratios I added minced black garlic and smoked pork jowl (Southern bacon). There was NO NEED to refrigerate, because they went from mold-->spoon-->mouth (rinse/repeat). Delicious!! Thank you !!!
I add the toppings in the cup before I add the egg mixture try adding O’Brien potatoes and chopped ham along with your egg mixture and spinach and mushrooms are great too
Its expensive convenience. And too theres are frozen. I luv ip eggbites. I can't afford a cup of there coffee. Much less any of the prepackaged frozen stuff .if i do get a coffee there its usual a treat from someone else. And I do the steam button on low. Same time as u .so i cant compare theres to mine. And Im kinda glad ,cause i luv mine.
I will,substitute cottage cheese with sour cream. I always use instant pot accessories they are always red, I never use spray,I use ghee in all my baking or anything that needs greased,you can not use the lid that came with your mold unless it’s silicone,DO NOT USE PLASTIC in your IP

I don’t have a steak button when you made on High you put on pressure cooker ? For how many minutes?

Remember Starbucks uses the sou vide method. I have that on my IP 3 quart and maybe will try it.
