How to bake shortbread cookies
This is a really rich and buttery recipe, with the use of cornstarch and oil the cookies are light and crisp and give a wonderful melt in your mouth taste. This recipe will easily yield 40 small cookies and any left over dough can be frozen for up to a week. Bake cookies on parchment paper for easy release.
This isn’t an overly sweet cookie so if your adding icing, this will be a nice balance of flavors.
Cookie press dough recipe:
8oz Butter at room temp
1 Cup powdered sugar
½ cup oil
1 Cup Cornstarch
1 tspn vanilla essence or vanilla beans from 1 pod
2 Cups All purpose flour
2 tablespoons of water
Bake at 350F for 12-15mins
If the dough needs to be softer for your press, add small increments of water one tablespoon at a time.

Roll out cookie dough recipe
8oz Butter at room temp
1 Cup powdered sugar

1 Cup Cornstarch
1 tspn vanilla essence or vanilla beans from 1 pod
3 Cups All purpose flour
3 tablespoons of water
Bake at 350F for 15-18mins
These cookies hold shape very well, however refrigerating the cutouts for 10 mins before baking can help give a clean edge to your cookies. Allow to cool on the tray before taking them off.
If your struggling with the dough being overly crumbly for roll out cookies, you can add a couple more tablespoons of water. This will soften the dough and make it more workable.

Hey I just tried this recipe for the roll out version and mine didn’t turn out like yours :( I followed the recipe but my dough turned out more moist than yours for some reason and it was hard to cut shapes with. I had to add up to a cup more flour to get the texture looking similar to yours. Can you post the recipe in grams so that the measurements could be more exact? I’m guessing mine turned out differently due to the variations in measuring with volume

Thanks so much for watching :) I think it will be too difficult to pipe in a bag, your hands are going to hurt. A cookie press really helps relieve some pressure from you.

Hello. Instead of using the vanilla stick I used liquid so it made my dough a bit soft. I am using the pampered chef cookie gun but they are not forming. What can I use to fix the dough ?
so it would pipe out and not hold shape? Maybe add more flour, dont add too much liquid for the vanilla
when you add 1 cup extra flour for roll out cookies don't you have to add extra sugar?
Chhaya Panchal these cookies aren't overly sweet so I don't add extra sugar. If you want to you can add maybe a 1/4 cup confectioners sugar and and tiny bit of water to bind the dough better.

Yes it is, In the US and Canada they call it Corn Starch. Both are the same ingredient

You can convert the measurements on google, and yes you can grind regular sugar with the cornstarch to make it smooth.
What is the cornstarch for? I’ve been looking at a lot of recipes and some use cornstarch and some don’t. Does it make a difference?
The cornstarch adds a lighter and melting texture when you eat. I agree with you iv seen recipes with or without. Many people don't like the idea of cornstarch but its a nice addition. canola or vegetable is good, olive oil is too strong

Tried the Cookie press one out today and it was a mega fail. I followed the recipe 100%
Hmmm...the dough was too wet for the press and after adding a cup of flour the press worked good but the bake was crumbles...nowhere near shortbread you could pick up and break.
Hi mam.. I baked these cookies today. Wow...melting in mouth ... awesome receipe... But I want to share my experience. I chose roll out method. I added three cups of flour and other ingredients as per your direction only. But by dough was not at all firm, no need for adding water, then I was not able to roll out...it was loose and I made a log, cling wrapped, refrigerated, then sliced and baked. What went wrong mam... Pls reply. Because next time I don't want like this to happen. I want to cut the cookies as u did. Otherwise, yes, it's extraordinary receipe. God bless you mam...
NAGAAMMAI MAA thank you for getting back to me about your experience. are you in a warmer climate? I would add more flour possibly to stiffen the dough further till it's a good consistency. The addition of extra flour would affect the ratio and sweetness too. So you could add a little more confectioner's sugar too. But try a little more flour and a couple extra table spoons of cornstarch hopefully that should help

I’m not sure what I did wrong but I made these and it felt like pill powder texture in my mouth and was disgusting.

oil gives it a crunch, and water helps soften the dough
