Just tried this recipe today and made a batch of the hazelnut shortbread with the chocolate dip. I haven't made cookies in years. They turned out marvelous !!!!! I will be making these cookies for Christmas and all year long.
1 c soft unsalted butter 1/2 c powdered sugar 1/2 tsp salt 1 tsp vanilla extract Cream together in a bowl then add: 2 1/4 c flour Mix well. Bake 15 mins @180 degrèes.
I use an all natural, no sugar added fruit spread, like Polaner All-Fruit. I have found that the regular jams and jellies tend to turn into "gummy" candy. This is my favorite cookie and I have experimented adding numerous items to the cookie dough including dried, exotic fruits and using fruit juices instead of water in the icing. There are so many things you can do with this basic recipe. I hope this helps anyone who wants to experiment on their own. Happy baking.
Mmmm, these are amazing! For the raspberry thumbprint cookies I made an orange flavored glaze by combining the powder sugar with orange juice rather than water...gives the cookie a nice zing of extra flavor. Happy Holidays!

Love this. I wont make the last variation with hazelnuts but walnuts instead. Hazelnuts i do not care for but I love walnuts. Im making 8-9 goodie boxes for gifts this year and i am having a hard time physically and these cookies will replace cutting out 6 dozen cookies. I especially love the raspberry thumbprints. Those butter cookies that you made are delicious. They are traditional where I am from. We call it, ghraybeh. We do it in the S shape. I made it for Christmas this year too, instead of jam I added green and red m&ms😊

Just took them out the oven. I did the thumbprint one. They're amazing guyss❤❤I stuck them in the fridge for 20 minutes before baking them so they can hold shape and I put the jam in a Ziploc baggie and piped it in to the crater. I also used half of the dough for the thumbprint and used the other half for the hazlent one. I didn't have hazelnut so I used half a cup of chopped pecans. When those are done I'm going to dip it in dark chocolate. Thank you! I love these!!
We grew up on the jam filled thumb print cookies but the recipe we used made the cookies way to delicate, I use a recipe now very similar to yours, I find them much lighter and easier to digest, and they just melt in your mouth, I will have to try the hazelnut dipped one...

@@Jojorocks23 Solo is a brand name ,and it fruit filling that is ready to go in cookies and other goodies. It is less sweet than using jelly and jams and it holds its shape better. It is found in the baking section at the grocery stores. I do not know if it is sold all over the country. I live in Illinois so all the big chains carry it.

I make those thumbprint cookies all the time! I use strawberry jam. I make the powdered sugar cookies as well! But I don’t roll them in sugar. I sift powdered sugar on top.

Just made them. I got in a hurry and sorta goofed on the first batch. But wow, they still came out yummy! Second batch was better looking. But for those receiving these, they won't know the difference. They have even begged for anything I made mistakes on. They are so funny. @@tracycarr3749 I make three separate doughs. I got 2 and half dozen from each batch. They are absolutely delicious. I also found making the thumbprints roll to make the dough soft then print and use warm jam.

Tip...start with the dip cookies so while they are in the fridge hardening you can work on the other cookies!

I made them this year and added a tablespoon of Grand Marnier to the jam. Skipped the powdered sugar and just used some melted white chocolate. Yum.

One variation for the snowballs, that I make, is to add toffee bits and mini chocolate chips. So delicious! Going to try your thumbprints...yum!
