As an alternative to smacking the trays to make sure everything is settled into the molds, you could also try inserting a plastic or metal chopstick (or even the wooden kind if you want), to poke and swirl the filling a little bit to get all the air bubbles out. Also as a suggestion, maybe try the extract in the apple puree instead of the chocolate so it doesn't change how it solidifies? I don't know how that would react to being freeze dried, but my limited experience with freeze dried foods is that it seems to concentrate the flavor, so you may even need to use less extract in the puree than the chocolate took...
Thanks, I actually mention adding the flavoring to the apples. For me it was hindsight since I didn't know how tart the fd apples would be or not. So I mentioned that for the viewers it would be better to add it to the apples. It is towards the end and i realize many don't make it that far in the videos which is a shame because that is where I talk about what I would do differently and lessons learned.
I see you moved the green molds to the top of your Amazon store. I also noticed you’re keeping up with the store; some products no longer had a price to present (one in particular does again, bravo!). Getting products updated to the store must be a long process I wasn’t aware of (I don’t have a store or YT channel, so I don’t know how things are done). When I first looked the Bestand wasn’t listed but it is now. Blending water with the graham cracker makes sense as presented, especially for people who may be intolerant of other carbs in their products. I was wondering, since I would be making these balls for my personal consumption, could I mix milk instead of water? I know the milk would freeze-dry, but once combined with the crackers is there a chain reaction I’m not considering? My Amazon subscription is on hold for now, and I did but the johnny apple slicer first, so it will be a couple of months (perhaps Black Friday) before I purchase the bestand, if I experience the same frustration you did. The bestand does look like it might cut better than the slicer, certainly longer items like a cucumber… have you considered using your bestand with a pear?

You should try using a zip lock bag with the corner cut off to fill the molds. Might be easier?
