It's the direction of the weave or knit of the fabric. Pattern pieces have a grain line on them and it's important to align this with the fabric grain.
That's very odd, do you have this problem with other videos or just this one? I can hear it just fine at 25% of my computer's maximum volume. Turning it up made it very loud. Perhaps you had some headphones plugged in and forgot, and were hearing the sound from the headphones without realizing?

There is nothing wrong with your sound. I was lowering and raising the tone at times.@@SewPDF
