All different kinds of knit fabrics can be stable; it depends on the specific fiber content and construction and is something you can tell by handling the actual fabric. Similar fabric for vintage patterns might most often be called interlock or ponte currently.

What kind of fabric is knit cotton

It depends. Cotton can be knit into all these types of stretch fabrics, so you need to know more about the construction.

    Tricot knit is pronounced “tree-coe.”

I know, but I can't get the correct pronunciation to stick in my head when I'm speaking. It's one of my Texan-isms.

what is a jaquard jersey? what are it's qualities in comparison to the other knits you've mentioned?

Jaquard is a pattern, jersey is a weave. So all jerseys should be similar to the ones I showed.
