The hardest challenge I’ve had with cooking my own food is that it’s super time consuming. Especially for someone like me: single, with a tiny kitchen so no big appliances for meal prep. I probably spend about 4 hours a day cooking/washing dishes. It’s a little demoralizing because I don’t have enough time left to work a full day and I’m struggling to find ways to save time without significantly reducing meal quality.

I’m sorry this is tough, and certainly you are not alone in this struggle. I hear it often!
What are some of your go-to meals?
Do you have freezer space? One of the easiest things I do to add veg (and save time) is dice onions and garlic and freeze them in individual servings. Or make a serving for 4, and freeze portions.

I might add try following workweeklunch on Instagram, they do all prep ahead. 1 day of cooking/cleaning and a full week of eating. Maybe something like that will work for you?

@@HealthyFamilyDoc thank you for the tips, I will check them out on IG. Unfortunately I’m guessing some of it won’t apply to me due to my lack of large appliances. Some of my go to meals are fish over a big salad or over steamed cauliflower/broccoli with tahini sauce, or a stir fry/scramble of veggies with some tempeh or tofu, and maybe an egg. Sometimes I’ll have plain nonfat yogurt with flax, chia, cacao nibs, hazelnuts, and berries. For a snack it’s usually fruit, nuts and a can of low sodium sardines or tuna. My friend is teaching me more healthy recipes now (vegan quiche, lentil soup, lentil patties), so I’m hoping to expand that. But yeah, the time is the hardest part for me. And just buying groceries and washing the produce (farmers market + groceries run) takes me a whole day, so if I wanted to meal prep on top of that, that would be my entire weekend gone. It’s hard, and it’s the one thing about this new healthy lifestyle that I truly fear will make it unsustainable. But i’m stubborn so I’ll figure out a way to optimize this eventually. I need a bigger kitchen, that’s for sure.

I am a 95% plant based eater- trying to avoid wheat- what gives with wheat??

Yes for some people it really doesn’t sit well. The more you eat plants and fiber, the more you change your gut micro biome (put in al the good bugs!) that can help you beat food intolerances. Also sourdough wheat products may be the easiest thing for you to add back after a while as the sourdough is fermented just in the preparing and baking process. This in turn is easier on the gut!
